Feeling better today, and 1 minute muffin

On plan again today, as I was yesterday. Feeling a little better mentally about it. Tomorrow is weigh in day, and I expect to post a gain. I am saying that now so that I won’t be bummed tomorrow LOL!

My mother asked me for tips on strength training, so I’ve been doing some reading and such to offer advice. Nothing like a non-professional giving advice! She is going to come over and use the bowflex, so I will help her with form and such.

I tried a 1 minute muffin recipe. I must share this with you, as I was totally fascinated by it.

1/4 cup flax meal
1/2 tsp baking powder
1 tsp sugar
1 tsp cinnamon
1 egg
1-1/2 tsp oil

Mix and microwave for 1 minute. We used a silicon large muffin cup. This was just like a muffin! A bit bland, but John made some cream cheese frosting to put on top. I am going to experiment with subbing some canned pumpkin for the oil, and adding spices to see what happens.

    That looks good! And how sweet is that, making one muffin so you don’t have a dozen of them tempting you? A bit of apple in there might be a nice addition.

    I've been recently addicted to the One-Minute Muffin myself 🙂

    I have been trying so many flavor combos! My fave so far is a citrusy one, with lemon extract, TrueOrange, TrueLime, and a dash of vanilla. It's really light and fluffy!

    I also like maple walnut, peach & ginger…. the possibilities are endless! 🙂

    Thanks! I can’t take credit for the recipe itself, just the tweaking. The internet is an amazing thing for finding all kinds of recipes.
    Doing the pumpkin for oil will bring the calories down for muffin, and a bit more fiber – not that it needs more!
