Bagels and no more pumpkin!

Thanks for your comments on yesterday’s post.  I felt a little silly actually putting that out there, but there it is!  I’m back to my usual self today 😎

It’s quite a nice day today.  Upper 40s and sunny.  John hung up the outside lights, although they won’t get turned on until Thanksgiving.  Best to do those when the weather is nice, right?

I worked steadily all morning and was very productive.  I don’t know how busy this week will be with the holiday coming up, but hospitals don’t close.  One of my clinics will be closed, but not the 2 hospitals.  I actually am scheduled to work on Thanksgiving (because hospitals don’t close…), but it will likely be very unbusy.

Felt like some good protein for lunch, and made a smoothie:

  • 1 scoop of vanilla protein powder
  • 1 banana
  • 1 serving of chocolate PB2
  • oat fiber
  • ice cubes.

This was thick and delicious!  I don’t usually drink my lunch, but this kept me full for a long time.

I would have made a pumpkin smoothie, but stores around here are officially out.  We shopped last night and there were signs up that there would be no more pumpkin (Libby’s or OnePie brands) until fall of 2010!  I have 1 can on my shelf at home, and we have a couple of pie pumpkins to cook up.  I know you can’t freeze the canned stuff, but does anyone know if you can freeze the home cooked pumpkin?  Not sure I want to waste it LOL!  We are going to pick up more pie pumpkins this week.  Maybe we will give canning a shot. 😯

I finished up work very early WooHoo!!  John and I took a nice 2 mile walk for an active recovery day today before dinner.  Chilly, but that makes you walk brisk 😀

Plus a delicious kiwi.  This kiwi had a label that it is from the US.  Where do kiwis grow in the US, anyone know?  This was a little more tart than the NZ kiwis, and I quite liked it.  Num, num.

    OK, hand over that gingerbread bagel!!!!!!!! 🙂 Sounds like a wonderful day & I just always love your pics! That kitty is tooooooooo cute! And yes, smoothies sure keep us full for a long time! I have to have them early in day so I have time for the tummy to feel better. They really fill me up!

    My dad & mom both used to do jams & such in jars but not anything canned & I am useless in the kitchen or anything homebody! Gym roaming is my specialty! 🙂

    Kiwi’s are my favorite fruit! I like them better sweet, but the occasional tart ones aren’t too bad!

    My boyfriends family cans jam, tomatoes, peaches, and these peach cinnamon desert topping concoctions….So Yummy!

    That sounds like a good lunch smoothie! I want to try doing an Amazing Grass smoothie as a meal. But well, I’m too scared. What if I get hungry?? 😛

    I don’t know anything about canning, but you can absolutely freeze pumpkin. Just clean out the guts, peel, chop and toss it all in a freezer bag. When you are ready to use just boil (like sweet potato) and mash! 🙂

    I live along the coast in central California and there is a farmer about 10 miles from me who grows kiwis! He’s the only farmer around here who does that though so I’m not sure what kind of weather is best for them. My grandma did canning and I considered doing it recently until a friend warned me how messy and time-consuming it is. So, now I just freeze stuff.

    Hey Lori, thanks for the heads up on pumpkin. I will be in several stores today and will check it out. Also have been enjoying the sugar pumpkins, so maybe will pick up a few more of those! I’d like to at least get through Christmas before giving it up.

    There are kiwis grown locally near me too. They have a little booth out where you can pick them up and leave a dollar or two!

    I don’t can. Seems like too much accuracy is needed!

    I so love a gingerbread bagel. If it turns out I can’t eat gluten again I’m really, really going to miss those! They are heaven on a plate!

    I have never canned anything. My cousin however is the canning goddess! I tease that she is an 80 year old in a 24 year olds body because she cans and quilts all the time, but I’m secretly just jealous! I’m really considering making preserves next year!

    Your food looks great! All that green for dinner must have been yummy. I too enjoy kiwis, especially when I am looking for a combination of sweet and tart. I have never canned anything but I think that would be fun to learn how to do it properly. I’m surprised the pumpkin supply is so low, it’s the one healthy dessert I can count on (well, if I don’t eat the crust). I hope people who wanted it were able to get some…I know I would be very disappointed if there was no pumpkin pie at the Thanksgiving dinner table!

    I have never canned anything, nor has anyone in my family that I know of.
    I can completely understand your feelings Sat. You got over it quick and are your beautiful radiant self again 🙂 It’s hard to not compare ourselves with those around us. I struggle with that at the gym (seeing people go faster and work out longer). You’re doing awesome and have come so far, don’t ever forget that!

    Ok, I am getting scared about the pumpkin shortage. I think I will stock up again next time I go to the store. You cat is so cute! I have never canned anything, but John’s family is Mennonite and they are experts at canning. I think pumpkin will freeze and can well.

    No canning here. My aunt does and makes great pickles and beets.

    If you need me to ship you some pumpkin just let me know. I don’t think there is a shortage up here in the Great White North.

    What do you do in the hospital? Not sure I know your profession. Please, do tell. Thanks!

      I don’t actually work in a hospital. I do medical transcription for clinics and hospitals. I am lucky that I can do that at home, but the records must be processed in a timely manner, so we all work around the clock.

    Not a canner…I don’t trust myself to do cooking that can go so disastrously wrong!

    *sigh* regarding the pumpkins…I pass fields full of leftover Halloween pumpkins every day on my way to work. I suppose they’re the wrong variety for pie pumpkins, though.
