Salad daze

Boy – everyone sure made all those favorite cookies sound so good! I’ve got a hankerin’ for some bakerin’!

Last day of the work week for me today! WooHoo!  The weather was forecast to be quite warm, so I actually slept in until 7 am today knowing I would run later outside.

Had forthought last night  to do some overnight steel cut oats.  Soaked them and then added a mashed banana during cooking.  Topped with chocolate sauce and almond butter.  Yum!

My legs and butt are sore today from the squats I did yesterday.  Squats always do that unless I keep doing them!  I won’t be doing any lifting tomorrow to rest my muscles for a 5K on Saturday.

Lunch was salad #1 today!  I kind of got on this BBQ chicken salad kick.  It’s so easy and tastes so good!  I warm up the chicken (cooked) and mix it with BBQ sauce, then use feta cheese and sliced almonds.

It’s one of those things that takes 5 minutes (with salad in a bag!) and looks so ‘bistro.’  This was a huge bowl of lettuce, too.

After lunch and my afternoon latte snack, I hit the track.  It was 55 degrees today, can you believe that?  Cloudy, but great running temperature.  I was thinking 4 miles, but told myself to do at least 3.  I ended up at 3.75 miles and called it a day.  Funny how my legs were so sore moving around, but they don’t feel sore when I run.

John won the football picks this week, and his choice for dinner was Chipotle.  (He changed his mind from chinese earlier!).  I had another salad for dinner!

Barbacoa on lettuce with some cheese and salsa.  Really good!  I was really hungry after that run, too.

After dinner, we did a bit of Christmas shopping and got several more people done.  Yay!  Our dinners seemed a little small, so we decided to split a treat:

Dunkin Donuts chocolate mint donut!  This is really good, I have to say.  With some decaf coffee.  I could easily have eaten a whole donut, but I am glad John split this with me.

It’s Horton!  I love Dr. Seuss (as does MizFit), and Horton is one of several Seussian inhabitants on our tree.  I grew up loving Dr. Suess books!  My very favorite is the Grinch – that is my very favorite Christmas special on TV, too (not the Jim Carrey one, ick!).

    The original Grinch is also one of my most favorites. It is a great memory because my mom was always a little grinchy at Christmas (until the actual day) and so she would cheer for the grinch until his heart grew 3 sizes. It was just fun.

    That lunch salad looks fab, and so does that donut! I love the topping. Cute ornament, too! Hmmm, fave christmas special… there are so many good ones! Maybe Rudolf–I have really good memories of watching it year after year with my sis, drinking hot chocolate and having it snow outside 🙂

    That donut looks divine! I might have to hunt for one at my local DD 🙂 Our own Christmas tradition is Rudolph the Red-Nosed Reindeer (the super old version with the characters that look like stuffed animals). My mom & I watch it each year!

    I Love Jim Carey’s grinch! Barely remember the older one……funny cause i usually like the original version of things.all your food always looks great Lori!i love the fact you and your husband seem to eat out as often as my hubby and i do. it goes to show you really can find healthy/calorie conscious most anywhere these days. You just have to make the right choices.

    I get the leg thing. My legs will be sore just to walk ect. but, running feels great and is actually relieving on the sore legs. Funny. You would think it would be the other way around!

    That bbq chicken salad looks SO good. Yummy!

    Hey, I have a Ginger/molasses cookie recipe from a friend that she said is to die for.. it is a fattening one so you may not want it. I have a big ole cookie or two on the weekend for my treat & they are fattening ones so I may make these instead & save the money of buying them! Course I may eat them all if I do that instead of 1 or 2! 🙂

    I find my sore legs never bother me while I run either! Strange. In fact, my legs have never hurt while running. Biking on the other had… 😛

    Grinch is my favourite too, closely followed by Charlie Brown and Mr. Bean.

    oh, we have a grinch ornament for our tree! how funny! LOVE Horton too! My favorite Chritmas special will forever be the Rudolph puppet shows, to which I now have on DVD and watch beginning NOV of this year (and admittedly before Thanksgiving)

    My favorite Christmas special is “Year Without a Santa Claus” ’cause I love the Snow Miser/Heat Miser song. The Badlees did a remake of it too which is great.
