Spring in my step

I am so sorry I didn’t include a P for Pixie yesterday!  So, I will make up for that.  I think she is more popular than I am……..

It is a glorious pre-Spring day.  I knew I wanted to run outside, but not until later so I slept in until 7:15!  Yay!  Felt pretty good, too.   I wanted protein waffles today, but with a different topping:

This was an apple cooked in a tsp of butter, 1 tsp of brown sugar, an SL of cinnamon, and about a tbsp of water.  I put a lid on the frying pan and let it steam a little bit.  Yum.  I might do more water next time and thicken it up to make a sauce.

Got to work early today while waiting for the temps to rise.  It was 26 degrees this morning, but low 50s this afternoon!  Woo Hoo!  Protein snack mid morning:

Lunch time!  I had the last can of tuna today.  Officially tired of tuna, and this can has been here for a few weeks.

Nom, nom!  After digesting for a while, I got ready to run.  Hello vitamin D!

I’m not exactly sure what this pose is supposed to be.  I kind of look like a weathervane.  Did 4 miles today.  Felt pretty good except for mile 3, where I started to get tired, but I was running into a headwind.

This made me dance around with joy!  These are the black and white tulips coming up.  Gonna be time to trim back and clean out the garden.  Happy, happy!  You all know how I love my garden 😀

After the run, I needed a snack:

Lattes make me happy.  I thank whatever Ethiopian goat chewed on the first coffee beans so that I can have this cup.

Dinner time and I had a frozen crabcake.  I baked it in the toaster oven (although I secretly long to deep fry it).   ….insert peanut eating here

Brussels with cranberries and clementines round it out.  I was so paranoid slicing the brussel sprouts because I did a report today where someone sliced off the end of their thumb with a mandolin.  One of those reports that make your toes curl while typing it up. 😯

Tomorrow is the wearin’ of the green!  I need to think of some kind of green food to make for St Patty’s Day.  We have an Irish family!

I need to put something green on Pixie, too.  Bet she would love that.

My mom is coming over tonight, so we can pawn off some chocolate on her LOL!  I think tea and chocolate sounds like a good night tonight.

    I’ve never had a brussel sprout. Maybe that will be my thing to try in March.

    My heritage is Heinz 57 – a little bit of everything. French Canadian, Scottish/Irish/English…basically if the skin will sunburn easily, then I have that nationality!

    Great job on the run…I actually walked my mile outside tonight. Not sure where I read this but I found a site where you map your walk and it tells you the distance. So exciting! I have to be be ready for my MS Walk in April.

    I’m Polish, Italian and Austrian…basically, there are a lot of non-healthy foods I love and I’m really stubborn! As for the brussel sprouts…can you just chop them with a knife? I’ll be trying that this week. The concept of eating them as something other than whole had never crossed my mind before.

    As for heritage, Irish and German. But unfortunately, no corned beef for me this week, as I didn’t plan ahead. I do loves me some cabbage!

      It’s so easy, just thinly slice the brussel sprouts, add to a pan with a tsp of oil (I like coconut). Add salt and pepper and saute for about 5 minutes until done. Sometimes I slap a cover on and just steam them a bit. Sprinkle with dried cranberries.

    I am Puerto Rican – so no Irish at all! But of course, in this town, on St. Patrick’s Day, EVERYONE’S irish. 🙂

    My father’s ancestors were from Sweden and mom’s were from Germany. I had a lot of fun tracing my family tree and learning about my past relatives!

    Yeay, spring is on the way!!! I feel sorry for the poor tulip sprout at my kids’ school, but on the other hand, there are daffodils and grape hyacinth already! I bet you black & white tulips are gorgeous! Sadly, tulips are annuals on the coast. 🙁

    Shelley B and I must be long-lost cousins or something! Definitely some Irish in there, my family always observed St. Patty’s day. My husband actually bought some corned beef and cabbage to make tomorrow! (He’s of German/Polish ancestry, so St. Patrick’s Day was never a big deal in his family. I’m tickled that he’s going to cook for it.)

    Once I get over being depressed about the melting snow I will rejoice over the budding trees and flowers.

    My grandparents on my mother’s side came off the boat from Italy in the early 1900s. My grandmother learned to speak English but if she got excited telling a story she would switch back to Italian. My father’s family came over from stuffy ol’ England.

    Mostly of Irish heritage, a little Cajun, a little German. But married into a Cajun family so that’s normally what I claim.

    Happy St. Patty’s, Lori! I am totally going to try pairing brussels with cranberries. That sounds like the best combination!
    I have a love/hate relationship with tuna because I tire of it easily, too. Then I’ll wake up one day and crave it…so weird!
    I am a whole mixed bag with my heritage! My dad’s side is Chinese, and my mother’s is a mix of western European and American Indian. So, definitely all-American! 😉

    Lori! This is off-topic, but I realized I’m going to be SO close to New York state when I move to Toronto! We should totally arrange a meet up for later this summer or fall. We can eat bagels and talk about biking 🙂

    For years my family thought we were part Irish, but turns out my great-grandfather was actually Norweigian and just adopted by an Irish family! My last name is German, but I’m more Scottish than anything else. My Papa was from the motherland and my mom has a dual citizenship.

    I’m a mutt, mostly a UK mutt! My dad’s ancestry is Irish and a bit Dutch…my mom’s is mostly English and Welsh. I am blessed with deathly pale pasty skin, light eyes, and dark hair. The sun hates me. 😛

    I’ll be having Irish stew (no Guiness, damn gluten), GF Irish Soda bread, and Bailey’s cake and fudge. I’m embracing my barely Irishness! 🙂

    Tuna and I have a very similar relationship – it’ll be all I want for days, and then…it’s over. A couple of months go by, and I’m like, “why did I stop again???”

    I’m Polish, Austrian, Russian and Romanian; there’s not an ounce of Irish in me, but I still bake up some soda bread every year!

    Oh butter and apples cooked together! Can anything be more delicious! Running into a headwind is hard work – good job. Tulips are my fave flower so can’t wait to see you black and whites when they bloom 🙂

    My dad is 100% Mexican and my mom is half Irish and half English. I love my heritage!
