I want to ride my bicycle!

Technically, it’s still winter, but you would never know it by the temperature!  In the 60s today!  I slept in this morning until a little after 7 and got up to make something you have not seen in a while:

Triple stack! Didn’t make waffles out of this mix!    So good.  Still seems like less than when I put the same amount in the waffle iron.  Go figure.

Working my last day of the week today.  Yay!  It’s going to be a glorious next couple of days, too 😀

Lunch break was greek yogurt, protein powder, 1/4 cup of pumpkin, spice, and the rest of my choco protein granola.

Interesting combo, I have to say.  Not sure chocolate and pumpkin go together all that well…

John made me a latte snack today paired with a couple squares of Extra Dark with pomegranate!

Then it was hooky time!  It was 61 degrees, so we got on the bikes and took a nice ride.  Did about 15 miles in a little over an hour.   The bike trail is clear now, so we got on that today!

No snow!  Another sign of spring is this along the bike path:

All the seasonal shops are opening in a couple weeks.  Also, our favorite spot on the bike path has yogurt again!  They stop selling it in winter.  That might be on the agenda for Saturday!  We are going to bike to Lake George that day.  30 miles… hope I am ready.

Today’s ride was an average speed of 12.4 mph and a top speed of 19.4!  Woo Hoo!  My thighs were burning a little bit, though.  Good workout.

Got home just in time to start dinner :mrgreen:   I made a shrimp and broccoli stir fry using a sesame ginger sauce.  It’s the organic store brand at Price Chopper, and it is very, very good.

Very, very good.  That’s a pear dusted with cinnamon.  As I said before, I put cinnamon or pumpkin pie spice in pretty much everything!  I just love the taste.  Here are some interesting facts about cinnamon to tie into National Nutrition Month:

  • Cinnamon has been shown to help regulate blood sugar levels.
  • Cinnamon also may be linked to lowering cholesterol.
  • Cinnamon is naturally antimicrobial.
  • Cinnamon may help with digestion.

Pretty good for a sweet little spice!

    Oh and cinnamon… EVERY DAY! Two shakes in my venti iced coffee. Not the same without it and once I read that it does good things for me… I loved it even more.

    I love a dash of cinnamon in my coffee. I also love it in scents and on lots of foods. Haven’t tried it on pears yet..will have to do that.

    Thanks for the encouragement about my run! I appreciate the support greatly. You were so right that a year ago I wouldn’t have dreamed of jogging, much less giving up extra time to do that versus even clean house. 🙂

    I LURVE shrimp!

    I use cinnamon in my protein shakes, sometimes my coffee, in my oatmeal, quinoa, yogurt (with vanilla and some maple syrup), sometimes with my brown rice & almond milk, cottage cheese. I LURVE cinnamon!
    I also chew cinnamon gum. 🙂

    I put a teaspoon of cinnamon in my bowl of oatmeal every morning. Yes, a whole teaspoon. I built up to it over time, because of the benefits, and now anything less in my bowl isn’t enough 🙂

    Yum yum food, yum yum frozen yogurt, and yum yum on a bike ride in the spring! And I put cinnamon on a ton of stuff too. I really like allspice too.

    I think I just put cinnamon on french toast and sweet potatoes, but I should try in on the pear I will have today as a snack…looks yum. Oh, and this weekend I am going to try to make pumpkin custard oats. I hope I do it right.

    From the pancakes to the shrimp, it all looks fab!
    I put cinnamon in and on oatmeal, most all baked items, and sometimes in main dishes if it goes with the theme.

    It will be a beautiful weekend! I can’t wait. Isn’t this one of the seasons when you just have to love New York?!!! 🙂

    UI love everything cinnamon! I buy a huge bottle of it & it is gone pretty fast. I put it on just about anything!!!! Also used to love eating those huge cinnamon rolls from the bakery! 🙂 Not any more… too addicting for me!

    So great that you got out for a bike ride since you love to do that! Hope the weather stays nice for you!

    HOLY PANCAKES! Looks fantastic! I actually consider cinnamon to be my number one condiment of choice. I literally add it to everything. Oats, yogurt, apples, bananas, peanut butter, pumpkin, squash…etc etc…I even use it in conjunction with savory spices like cumin, curry and paprika.

    Okay, I’m catching up and didn’t want to comment on every single post – but that’s awesome you made it out on your bike so soon!!! My dad always aims to bike April – October, so starting in March is pretty darn impressive. I don’t quite have the cold weather gear for mine, but all I need is a few extra degrees till it’s warm enough. Can’t wait!!!
