Another rainy, drizzly day today.  Hit the gym for a nice 4-mile run on the treadmill.  It felt quite good today.  Must be because I haven’t done a run in a week.  Biking does the legs some good! 🙂

John met me part way and we decided to partake in the Starbucks free pastry day for breakfast.  I had a skim latte (drizzled with honey):

And the reduced fat berry coffee cake.

It was fresh and pretty good, although still a little institutional tasting.  But thank you Starbucks!  Mucho appreciated!

Standard work day today.  Pixie kept me company for a while.

This girl really knows how to sleep.

Lunch was good today.  I made up an egg/egg white omelet (hot sauce? Yes please) and roasted up some cauliflower in the toaster oven with some Chinese 5-spice powder.

I think I would like the cauliflower to be a little more roasty than this.  The spices made it looks more toasty that it really was.

Glad you liked my post earlier on how I build my meals.  It is such a habit now that I don’t think too much about it.  I used to always want some kind of carb thing with dinner, but then I realized that could be fruit and not bread!

John made up lattes today, and I left out the protein powder, but there was a square of this (x2)!

Think I liked it?  So good.  Little crunchy toffee bits and peanuty goodness.  Hellooooo oatmeal!!  I need to try to make some more different kinds of nut butter like this.  I’d start a business if there wasn’t already a local nut butter seller!

I think I might be safe in telling you all that I have an offer on the rental property!  That was my one goal in March – to sell it, and I got a good offer a couple weeks ago.  Last week were the 2 biggies from my end, which were the inspection and the appraisal.  Both went well, so that is all I can do from my end.  Now we just need their concrete mortgage finalized and closing will be in late April.  I was leaping around on Friday after the inspection came back in the clear!  This will be a *huge* stress off my back once the sale is done.  Now I probably jinxed it by saying something about it :mrgreen:

Dinner time:

This looks small, but there was a cup of broccoli in there 3 oz of shrimp, plus a little bit of the rice John cooked yesterday.

I even have a more appetizing snack for tonight:

My first time trying the mini babybels.  Have you had them?  If it is cheese anything, I will like it….

Tally of fruits and veggies today:

F: 2 clementines, strawberries, 1 pear

V:  1 cup cauliflower, 1 cup broccoli

    I love the Babybels – or all things cheese really. It’s one of the things I’m playing with throttling back on because of my LDL numbers.

    I’m getting more spinach and salad greens, as well as more veg in my morning omelets. So yea, I’m doing pretty well with upping the fruit and veg content.

    My veggie challenge is going pretty good, although I’m really not eating veggies with lunch (unless you count avocado, which I don’t). But I am eating a lot of them with dinner. And my fruit intake is high…kind of a result of trying to avoid those bars, lol!

    I’m not real fond of the Babybel cheese, although it’s been years since I had some…wonder if my tastes have changed?

    Today I had celery sticks and tomato juice with breakfast, spinach with lunch and with dinner I had zucchini and cooked tomatoes. I also had a raw tomato and red onion with my bunless burger. My fruit was a Golden delicious apple.

    That latte looks lovely. My misto partner from work has been off and it just not the same for me to go and have one alone. I can’t wait for next week. I could also find someone else to go with…that is an idea.

    I ate a HUGE salad today plus had a ton of tomatoes and half of an avocado with dinner tonight…I think I did ok! I like those light Babybels but the texture took a little getting used to. I love anything cheese though…

    I took the Starbuck’s coupon with me, but I ‘intuitively’ decided not to stop LOL! I had already had a big bowl of yogurt and pear, and I had my custard oats with me for my second breakfast, which I was really looking forward to.     Yay for veggies! I made a dinner with spinach last night. It was spinach, basmati rice and ham flavored with garlic, onion and white wine baked in a casserole. I used egg whites and a bit of gruyere cheese to bind it together and a bit more gruyere on top to make it all brown and bubbly. The volume of spinach to rice was about 2:1, so lots of veggies and so much flavor. Really delicious, I can’t wait to have leftovers at work on my dinner break tomorrow evening. Yum!

    The veggie thing… Doing better. Had to go out yesterday and got a side salad. Today I stirred a serving of spinach into lunch. Usually I only get one or two veggies in at dinner so adding them at lunch helps.

    Mmm, that peanut butter sounds divine! As for babybels, I think I had them once and didn’t love them, but I do love cheese so maybe I just need to try them again?

    I’m getting more veggies by focusing my lunches around mostly produce, and making my dinner more about protein. So lunch has me eating a salad, apple, and carrots before I have a bit of protein, and that’s more than half my daily total right there (1.5 cups of carrots and 3 cups of lettuce :).
