Navigating my way…

I can’t believe my weekend is almost over already.  I guess that is because I worked a little yesterday.  I slept pretty well last night, which was quite a relief, but woke up around 4 am with excruciating pain in my knee.  I think I like the numbness better.  It was past pain pill time, so I took one and fell back asleep.  This is just bizarre how the pain moves around from hip to thigh to knee.  Nerves are just an amazing thing in the body.  Sorry to keep talking about this, but I have never had an injury journey like this, so I am sort of feeling my way around.

I was feeling like something different for breakfast – so I made a pumpkin 1-minute muffin.  It took me forever moving around.  Only I could turn the 1-minute muffin into a 10-minute muffin. 🙄

It was worth it, though.  Topped with light cream cheese mixed with a bit of powdered sugar.  Soooo good!  This also filled me up until lunch, too.  It was awesome.  Or maybe my appetite is catching up to my activity (or lack thereof).

After breakfast, John took me to the indoor farmer’s market.  It’s smaller when it is indoors, but very charming.

My pics didn’t come out all that well.  There were hydroponic greens there, and lots of root veggies.  We picked up some apples and some parsnips!  I was all excited for a new veggie.  Is that a little sad?

We also stopped and got a new grill.  Our grill completely disintegrated into powder – and I am not joking – so we got a portable gas one.  I’ll get pics sometime after we set it up.  Walking with crutches is so slow, so all this took most of the morning.

Lunchtime and John wanted to try the parsnips, too.  He chopped them up and pan sauteed them in some coconut oil.  I made an egg white puff to go along with.

The parsnips were good!  They are kind of like a cross between a carrot and a potato.  I have a fun recipe to try with them, which I’ll probably do tomorrow.

I am pretty sleepy today.  Think it is the pain pills, but also just the fatigue of injury.  I am so glad I have all this upper body strength to use the crutches with.  Chin ups are good for something!

John has been busy cooking today.  He made a low fat protein brownie variation, which he brought out a sample of with my latte:

I’ll see if I can get the recipe from him.  Not low calorie, though.

I was so jealous, because John then went out for a bike ride.  Wahhhhh!!!  Although he made up for it by scoping out a store and bringing me some of this!

Pumpkin!!!  My stash was getting low, so I was all kinds of happy to see these cans 😀

Dinner time was a stir fry.  We had some cooked rice, so I combined that with broccoli and chicken and a little sesame oil.

So good.   I wandered outside to look at my garden.  I have some early tulips blooming now:

I think some of the perennials did not make it through the winter, so I might have some fun finding replacements this year!

I had a sweet urge, so I had a date.  Soft medjool dates.  These are like candy.  Expensive, but so worth it!  One with nut butter, one without.

Not much else on tap for the evening other than being slow.  I am so not used to doing anything slow for very long, so it is a good exercise in patience for me.  John was saying taking an extended break from exercise isn’t always a bad thing, so I am trying to view it like that.

Question:  Do you eat dates?

    Hi Lori,

Sorry to hear about your injury. Keep your spirits up. I love dates and we have a lot of local sources here in California. I use them to sweeten my morning shake, here’s my recipe:

    1 frozen banana
    2 cups vanilla soymilk
    1/2 cup plain, non-fat yogurt
    6 frozen strawberries
    4 chunks frozen mango
    2 chunks frozen papaya
    1/2 cup oatmeal (uncooked)
    1 teaspoon cinnamon
    8 dates
    1/4 cup oat bran
    3 tablespoons hemp protein powder
    large handful of steamed spinach
    4-5 steamed kale leaves

This smoothie serves two people and it’s GREEN but delicious. 🙂

mmmm… dates they are my favorite!! They are really pricey; i usually pay $8/lb for them at our farmers market, but was really excited to find them at a random Costco for half the price. Keep an eye out =)

Dates are like candy! I haven’t had one in ages…wonder how I’d tolerate them now? I like your idea of eating them with nut butter.

Glad you were able to get out & about today, and that you got a good night’s sleep…I should take a page out of your book and do the same!

Oh my gosh, are those your pain meds by the cans of pumpkin??? That cracked me up! 🙂

Continue to heal. I’m glad you’re looking at this as a time to rest.

Yes – I just whipped out my camera to take a picture where John set out the cans and realized later you could see my meds and a crutch LOL!

I can’t even believe how just that little move you did at the gym has led to this injury. It’s crazy.
I’m glad you were able to get some sleep and I sincerely hope you heal quickly.

“Only I could turn the 1-minute muffin into a 10-minute muffin.” … this made me laugh. You’re just too funny.

If you like parsnips you will probably like kohlrabi. Have you ever tried that? I just had some yesterday.
Tulips are my favorite cut flower … I don’t have any in my garden though. Maybe I’ll have to plant some this year. Those are very pretty.

I haven’t had a date in ages. 🙁 Either kind. boooo. lol

It is crazy how what seemed like a little thing caused this big a problem. I wish I had injured myself actually doing something….

I have seen kohrabi, but haven’t tried it. I think it is like broccoli in taste?

I absolutely LOVE Medjool dates! They are one of my favorite treats. And parsnips also make a great addition to a veggie soup. Good luck with the recuperation – maybe John is right and this will turn out to be a good rest period for your body.

I never buy medjool dates because of the price, but they are sooooo good.

Your hunger levels are definitely meeting your activity – which is a good thing! I just started eating parsnip too, in fry form is obviously my fave way to have them 😉

I don’t think I’ve ever had dates but I’ve been wanting to give them a try since seeing them on your blog. I feel so bad for you with your injury now that the weather is nice. 🙁 Hurry up and heal!

Lori, so sorry this injury is keeping you down & with pain too. I know this is hard for you & you might be like me who hates to take pain killers & such unless you absolutely have to – UGH!

On a lighter note, that muffin looks scrumptious!!!

The tulip – BEAUTIFUL! I love them & I love lilacs too!

    Feel better soon!

After an unexpected break from working out, you just may come out stronger than ever! 🙂 I used to think that a long break would hurt my progress but, sometimes that’s just what the body needs.

Glad you are coming along well with your healing. And those muffins look scrumptious! I will have to give them a try.

Silly girl: you can talk as much as you want about your injury, it’s a big part of your life right now so perfectly normal to talk a lot about it!

I hardly eat dates, not a big fan of them. But as I read other comments they are much more expensive in the US than here.

Medjool dates–as good as candy! Love them stuffed with walnuts, or cut up and mixed in yogurt, also with walnuts.

That smoothie recipe with the oatmeal sounds yummy, doesn’t it?

Hmmm. I didn’t like the one minute muffin the first time I tried it, but since you like it, I might have to try again!

I am so glad I am not the only one that thinks that LOL! The medjool ones don’t look so much like roaches as the little Dole ones.

Lori – I hope you get to feeling better soon! I’m so scared to getting hurt. Thankfully I’ve only had minor setbacks thus far that have not held me up for more than a day or two.

I never ate dates until I started reading your blog. Now they are an occasional treat with a touch of peanut butter.

Tomorrow morning I’m going to give the custard oats a try.

Have a great evening! Hopefully there is no pain waking you up tonight.
