Carrot Cake Oatmeal and baby steps

Happy new week!  I am feeling a little better today.  I have come to the realization now that my leg is going to take a long time to get better. 😥   At least I am pretty much off the crutches, although moving at a snail’s pace.  I was able to stand long enough to take a full shower this morning, which was a big change.  My knee is still numb, though, which is really weird.

I had this idea for breakfast oats while reading Debby’s blog about putting zucchini in oats.  I thought – why not carrots??  So – I present to you Carrot Cake Oats!

  • 40 grams of oats
  • 1 tsp brown sugar
  • 1/2 cup finely grated carrots
  • 10 grams chopped raisins
  • 1 tsp cinnamon
  • 1 cup water
  • 1/4 cup egg whites
  • 5 toasted pecans
  • 1 tbsp light cream cheese
  • 10 grams of powdered sugar (approx 1 tbsp)

Add the carrots, spice, and raisins to the water in a small saucepan and bring to a boil.   Add the oats and cook for several minutes until almost done.  Whisk in the egg whites and cook for another minute.  In a small bowl, combine the cream cheese and powdered sugar until mixed.  Top the oats with the cream cheese mixture and crush the nuts on top.

This was soooo good!  I think I would leave out the brown sugar next time, as the carrots are sweet enough on their own (I used baby).  But that is just me.

Calories for this bowl are about 380, and that will depend on the cream cheese variety you use.  So, a little calorie dense, but good for a post workout brekkie (not that I worked out or anything today….)

Slow work morning, so I got some things done at my snail’s pace around here.  I walk with tiny little steps, but I am getting around!   Lunchtime was egg salad – haven’t had that in a while!

With a yummy anjou pear.  These are extra good this week.  Just like the strawberries.

I was feeling some chocolate, so I had some of a Hershey bar.

I then proceeded to have the rest of the bar, and some graham crackers and a few dates.  Plus a latte.  Got kind of snacky today!  Hello????  What is up with that?  Must be all that extra movement I am doing. 🙄

I was able to do a little upper body work today, like some wall pushups and tricep/bicep work with dumbbells.  Can’t keep me down for long!

Dinner time:

Breaded clam strips (baked), plus maple glazed parsnips.  I am officially a fan of parsnips now!  I’ll post the parsnip recipe tomorrow.  It’s quite good 😀

Without the exercise in my day, I have this extra slot of time.  It would be nice to go out and do things, but I get tired easily, or tired of being in the same position for too long, at any rate.  I think I was snacking a little bit out of feeling blue about how long this is taking me to heal up.

    I’ve been waiting all day for your recipe! And I got very snacky today too…I think it is 2 solid days of rain and a little anxiety about cleaning up the house for my friend to visit.

    Good for you on keeping up the upper body work.

    You need to take up knitting or quilting or something. I know someone who could help you if you want….

    I’m sorry you are still hurt, but look at it as an opportunity! Rather than playing card games while you are healing up, look into doing something you have always wanted to but never found the time for. Write the great American novel, learn a new language, or volunteer! I know it’s frustrating to not be able to really work out, but at least you can enjoy a bit more free time for the things you couldn’t get to before!

    Aw, Lori…that is such a bummer. 🙁 It sounds like you’re doing good with what you can do, upper body-wise. Do you think you’ll be having any physical therapy for your injury?

    Hmmm…what to do…what to do. I advise you take Debby up on her offer to teach you how to quilt or knit. 😉 Pixie would like playing with the yarn balls, I’m sure. Either that, or maybe John could get you some good books from the library?

      I am not sure about formal PT, but I do know that I am going to be getting myself a foam roller to keep this area stretched out in the future.

      I probably should get moving on my guitar playing. 😀

    I’m glad you are moving around better – so weird about the numb knee, though. Things to do while you are healing? Hmmm…maybe perfect your guns while you can’t do the lower body work? And reading blogs and books that will keep you motivated will hopefully help with the food issues…but hey – you are injured and do need to fuel your body so it heals, so maybe chocolate is necessary!

    I’m feeling all guilty reading how you did an upper body workout even with the injury. I went for a run today and wimped out at 1/2 mile because it was raining hard. Then on the way home I kept seeing people out jogging anyway. Hanging my head in shame here… hope you feel better.

    Oh no Lori, I’m so sorry you’re injured. I’m just now seeing this. I really hope it heals quickly and more importantly back to 100%. I read your last few posts and saw where you said you have a fear of not being active. I get that, I really do. I’ve been dealing with some back pain lately and my mind kept playing weird tricks on me. Sending lots of good thoughts your way xoxo

    Cinq-0 is a great little dice game, though I can’t find it anywhere here. My friend has it, bought it at Target and we haven’t seen it there since.

    Maybe you can add book reviews to your blog for a while, or start a temporary new blog for book reviewing?? Or start the book about your weight loss story…or who knows? I always think I’d do lots of things with extra time and then don’t.
