I love eggs, let me count the ways.

Almost the end of the week.  Funny how I took a day off and I still have to work 5 days in a row.  Gotta love 2 jobs, right?  I wanted to run this morning, but it was rainy and drizzly.  That meant heading out to the gym to visit the hamster wheel there.  I put on Hot Club of Detroit, set the machine at 5.5 mph and went to it.

I mentioned this on FB earlier, but I always have issues with mile 2 – no matter how long I run for.  The first mile goes by fast because I am adjusting to my pace and a fresh and all that.  For some reason into mile 2 to 3,  the little voices go in my head like,  “I want to stop.  I don’t like running.  This is taking forever.”  I know that if I just keep going those thoughts will pass and I will feel fine, but they sure are annoying!

I ended up doing 4 miles.  Probably a little further than I needed to go, since I only had a 100 calorie protein drink before I left.  So, I was really ready for breakfast!

My Irish porridge oats done banana custard style.  These are so good.  Well – all oats are good to me, so I guess I don’t need to say that all the time LOL!

Busy working morning on a dreary day.  I wanted something spicy for lunch, so buffalo chicken here we come!  With laughing cow blue cheese:

I tried a new-to-me protein bar today.  Everlast.  They were on sale at Hannaford as they are clearing them out.

This was actually pretty good.  Less calories than other protein bars (160) and no sugar alcohols or other crap.

John said he almost suggested pizza for dinner tonight, but good thing he didn’t because I probably would have gone!  Instead, I made an egg/egg white omelet in the GT express with some pepperjack cheese inside:

  6. Eggs are an inexpensive protein source. Eggs are economical, especially when compared to steak or even a hamburger.
  7. Eggs aren’t only for breakfast. “Think like the French and don’t dismiss eggs as a great dinner food,” says Roberts. “It takes a mere couple of minutes to whip up an omelet, so you can keep eggs in the fridge for quick dinners when you get home and are too tired to cook or go out. A two-egg omelet with a slice of whole-wheat toast and an apple or orange is a great weight control meal.”  You all know I love breakfast at any time of day!

    I love eggs, love them. I have 5 egg whites scrambled with baby spinach every single morning for breakfast, and it is my favorite meal of the day. A couple times a week I let a yolk slip into the mix too.

    You inspired me to make a Buffalo chicken sandwich of my own last week and it was excellent, by the way.

    mmm your food always looks refreshing and yummy!

    I had homemade huevos rancheros for lunch today. Most of the time I eat them for dinner. and I like my eggs poached best.

    I probably eat 1-3 a week. then I bake the rest in stuff.

    I adore eggs, and so do my boys. Between the three of us we polish off an 18-egg tray a week.

    I also stick egg whites into oats, and poached eggs on wholegrain toast is nummy, but my favourite is a veggie omelette or fritatta. This morning Arth and I split a mushroom, tomato & pumpkin fritatta made with 3 egg whites and 3 whole eggs. His side also had some ham and low fat mozzarella on it.

    The toasted coconut and pineapple (it is pineapple, isn’t it) looks delish!

    I’ll always eat my eggs hard-boiled (for easy yolk removal) or egg white custard oats. I’m not against egg yolks because of their so-called reputation. I just hate egg yolks – runny or solid. Scrambled is meh..
    What kind of bbq sauce do you use on your chicken? I love the idea of adding Laughing Cow too!

    Well, I am becoming more and more of an egg fan. Today I made a frittata. And I love a scrambled egg in my ‘fried rice.’ Of course, custard oats is my favorite. Otherwise I like scrambled eggs with a LOT of additives (more other stuff than eggs.)

    Hey, Lori, I did ‘front raises’ today at the gym. And of course, you were right. I did five pound dumbells, and then I moved up to 10 pound–ouch. Could only do 6 reps with the 10 pound.

    I struggle between 6 and 7 km often. It’s annoying indeed.

    I love eggs too, love them srambled, cooked, baked. But the egg (especially cooked) can’t be soft, don’t like that.

    I have a really hard time around 1.5 miles. I start getting really tired at that point. But then after about mile 2 or so I start to pull through, so I can relate!

    Some days I want my eggs. Other days I want no part of them. But they’re always in my fridge for baking. My body’s “I hate running point” fluctuates. The hubs always takes two miles to get into the groove. Good thing we are running longer distances. Great job on the 4 miles! I’d have keeled over on 100 calories. You rock!

    It’s weird what our “bad” mile is – for me, it’s the first half mile, as I get my breathing under control (improvement from the entire first whole mile), and then it was mile 6 to 7, although I made it through that one last week ok. Glad to know someone else has this issue!

    I like eggs ok but could think of other things I’d normally choose before them.

    Great rainbow! Way to go on the 4 miles. I love eggs all way but with mayo. Just don’t like mayo so no egg salad for me or deviled eggs. I like them with tuna and a bit of mayo but just a smidge, I’m wierd that way lol. Also loved them fried, scrambled, boiled. Getting 2 dozen of fresh eggs tonight actually from one of the TOPS ladies that has chickens. So lots of yummy eggs this week for sure.

    I didn’t let myself have eggs for years… during my low fat, fat free whatever years. “Rediscovered” them a few years back when my doc told me eat more protein! Often a boiled egg is a snack for me. Yum.

    Anyone who runs has a haunting mile. Mine actually depends on the conditions and the distance. After I ran my last marathon I said to my daughter, “Why why why do I always get sick to my stomach right around mile 16!” She said, “Sounds to me like you should be running HALF marathons mom.” Smart alec.
