Mexican is the cure for a fried brain.

I am wiped out.  Wiped out!  Really long day today, so this is an abbreviated post.

Sounds like there are a lot of fellow cookie dough lovers out there!  Yay!  My mother and I had great success last night shopping.  I do see why people purposefully wait to buy things.  There were some great deals last night!  I also was glad we went on a Monday night to the mall.  It really was not very crowded.  Mom and I had pretzels at Aunt Annies’  I haven’t had one of those in a few years, and it sure tasted good after a long shopping haul.  Plus it didn’t have any sugar on it, so I was able to complete a no-added sugar day yesterday!  It is so weird how sometimes it is so easy to not have any sugar and some days it is a real struggle.  Guess that is because we aren’t robots, right?

I got up this morning and was going to go to the gym to hit the treadmill, but I really did not feel like going outside.  Instead, I just hopped on the bike trainer for an hour and did 15 miles.  Yay!  I know you are all tired about hearing me yak about the trainer.  15 miles is what I consider a ‘maintenance’ ride.  That would be a standard distance for me outside on any given day.  I am going to be so ready for long rides right out of the gait come spring time :mrgreen:   John and I are already talking about another 100-mile ride.

Cookies!  Before breakfast even. These were a bit of a flop in appearance.  They actually are not very sweet cookies.  The dough is just butter, flour, cream cheese, vanilla, and 1 teaspoon of sugar.  They are filled with jam, which is the only sweetener, so a good respite from overly sweet goodies.  I had them folded up nice, but they unfurled in the oven.  So the second batch in the oven just got made thumbprint style.

I made up some breakfast after eating said cookie.  Pumpkin custard cream of wheat.  I topped with eggnog honey, cranberry sauce, and a few toasted walnuts.

The walnuts were a nice change, but I do prefer pecans.

I was swamped with work today.  I hit the ground running at 8:30 with work (while eating breakfast, I sadly admit).  One account batched over 3 days of files, so we were asked to work as much extra as possible (aka whip cracking).  So I basically worked a full day with one job and a half day with the 2nd.  Kind of like I was doing early in the summer.  I do remember now how I disliked that…

I pretty much worked right up to dinner and my brain just kind of melted into a pool of goo.  So – it was dinner out tonight!  I won the football picks this week – 2 weeks in a row now.  (That is more like it).  So time to make John pay up.

I chose a new place to us called Carl R’s.  It is a tex-mex kind of place.  Of course, that is upstate NY tex-mex.  It was little heavy on the neon, though!  Everything was glowing pink.

I had enchildadas.

They were quite good!  Could have been spicier, but a decent meal at a decent price.

I finally get a night to relax now.  I’m either going to wrap presents or bake cookies…

    Nothing wrong with cookies for b’fast! I have them every day.. well my homemade protein cookies! 🙂 BUT, a treat cookie is good too! No rules about what to eat when in my house!

    Is it busier at year end due to people getting all their appts in before the end of year?

    Lori, your food concoctions continue to amaze me….I love the breakfast bowls you make!

    As for the bike trainer, I have one as well and I love to ride while watching TV – catching up on my stories! It’s awesome you can ride for so long! And you will so be ready for spring rides. You’re doing all the rite things to give yourself an edge.

    I love when dough has cream cheese in it. I have a recipe for mini shoefly pies with cream cheese in the dough and it is oh so good.

    Yum to Mexican! I go once a week for enchiladas!
