Happy Pi Day and weekend nibbling

Happy Pi day! (3/14).  Or happy Pie day, as we like to think of it…

I seem to be doing okay with the time change and sleeping, which is a little surprising to me.  I was up maybe a squidge later than normal, but not bad.

I was hungry and ready for some breakfast!  Today was a 1-minute muffin with some blueberry sauce and topped with a bit of coconut butter.

I do like this combo.  I could seriously eat the coconut butter just by itself.  I have seen it also called coconut cream (not cream of coconut, which is sweet).

I did the little work there was and then got productive and rode the bike trainer.  I did 11.5 miles in 45 minutes.  I actually read blogs while on the bike, so I killed 2 birds with one stone.  No replying, but still reading 😀

Then I practiced my guitar.  I am trying to work towards what my new schedule will be in a couple weeks for my new job.  I will be back to my Sunday through Thursday schedule, but the hours will be from 2 to 10 pm. I am not crazy about that, but I do actually start at 4pm on Sunday, so most of a weekend off.  I don’t know how that will affect my blogging schedule, if at all.  Not totally sure the MT industry is really where I want to stay as it is not something that really can be a career anymore due to offshoring and transition to EMR.  BTW – ask your doctor if their medical records are transcribed in the US or not.  You might be surprised at your personal info being shipped off to another country.

Anyway, it should be full time, but I am a bit gun shy with being told that previously and not having enough work – and I can always use the money. Girl has got to eat, right?  Such as this for lunch:

What is that, you ask?  I had about 1/3 of a cup of the palak chole (recipe) left from the weekend.  Not enough for a complete entree, so I was trying to figure out what to do with it.  I decided to make an omelet with the palak chole as a filling!  It worked out really well and was quite tasty.  I did scramble it a bit too much, but the flavor was very good.  I put laughing cow on the top, but truthfully I could have done without it.

So the title of this post is weekend nibbling. I was looking at my food log for the weekend, and while I didn’t really overeat anything in particular, I did have a few extra snacks.  Mostly in the form of peanuts and some chocolate.  Even after all this time, there is a tendency to want to eat more on weekends.  It’s funny, because I work at home and my schedule is really pretty much the same on weekends as it is on weekdays – only no (or little) work.  So it’s not like office versus home or anything. I have the same access to foods during the week as I do on weekends.

I often times do still plan my foods out in Livestrong for the weekend to help keep me on track, but then I will grab a few extra things.  I know that is probably how ‘normal’ people live their lives, but I always fear going off the deep end and really packing away the food.  Because I still can quite easily.  Yes I can.  The urge is there at times.  Not all the time, but sometimes you just want to say “whatever” and just eat out of a bag of chocolate chips or box of crackers without even knowing how much you have eaten.

On that note, the peanuts have gone up high so I cannot reach them.  I was heading to Snack Town on the express train with them, so I needed to nip that in the bud.

Dinner time full of grocery goodness tonight!

Well, the chicken was from the smokehouse, but fresh berries and brussels were from grocery shopping.  Hooray for natural light dinner pictures again!  Thank you time change.

And in honor of pi(e) day, John made these.

Coconut tarts with chocolate and coconut cream.

Recipe here. These are freshly minted and need to cool, so will have to wait to test them!

Question:  Did you pi(e) today?

    Those tarts look delish!

I did not have pi(e) today but I did eat a piece of apple pie last night! That should count. 😉

My ex-math major heart delights in Pi Day, but alas, I did not eat pie today. Eat a bite for me! (Those tarts look so tasty!)

No pie for me! And I am A-OK with that. BTW, I totally understand your fear of going to town on snacks. I guess we have to keep a more critical eye on what we eat, just in case old habits pop up.

It’s that slippery slope. It seems to be pretty well greased for me, so I have to really probably keep more of a watchful eye on it than a lot of people.

No pie for me! (soup nazi reference)

Those tarts look amazing. And four ingredients on the list??

So funny about the peanuts–I was heading to Snack Town on the express train with them. Like the trail crack for me. I always wonder when I eat that stuff–why don’t I just have a chocolate chip cookie or a piece of cake. Not sure why…

p.s.–2-10pm? Don’t know about that. And I’ve been wondering about your job and if it was affected by EMR. We have gone that route at work. The change over has been somewhat painful. Only 27 shifts left…

The industry has been affected by EMR, although there is still editing that has to be done with EMR. We just get paid less to do it.

I don’t like the 2-10 pm, but I have been having to work evenings anyway lately, so it will be nice to just have a set employee schedule.

jeez and to think i used to teach math! i could i have forgotten about pi day? no pie and no math fun for me. love your muffin breakfast!

Forgot about it being Pi Day until the evening…no pie here. 🙂 Your tarts looks delicious!

I’ve been out of the MT world for about five years now and was wondering how it is being affected by offshoring and EMR. Interesting. It makes me sad to think they’d rather pay (or have to – not sure which) people in another country cheaper to do our work.

I used to ask my GYN if he dictated clearly, and reminded him that it makes for a happier MT if he would. LOL 😀

Also a weekend snacker here. It is weird how the ming goes into ‘weekend’ mode even when you’re around the same place and food.

I can totally understand your fear of too much snacks. Lately I’ve fallen a bit of the wagon and eat to much of those which results in a gain. Need to get a grip on myself and stop doing that.

I didn’t have pie yesterday, didn’t even know it was Pi day 🙂

I think you will find your routine for your new working hours. You have the mornings of to get your workouts in and get the things done around your house.

OK, that pie looks absolutely delish!!!!!!!!

The work thing, always crazy & something though but a good thing you got work.. yes, we do have to eat! 😉

That snacking can get the best of so many of us out there.. important to be aware of it. You are Lori & that is the good thing, you know what you have & have not done but others just “ignore it”.. which is not a good thing….

I think the coconut tarts were the perfect solution to Pi Day! Hey, if you feel like you’re heading to Snack Town on the express train (this may be my new favorite saying!) then it has to help to have your snacks in controlled portions.

As always, I am amazed at your awareness and honest reflection Lori.

No ACTUAL pie, or pi but there were thoughts of both. I’m sure your new working hours will become routine soon! Yay for working!!! (and someone said to me the other day “work is what you do, not who you are” – it’s a means to a good life OUTSIDE of work – so I’m grateful for my job, though I don’t love it at the moment.) Have a great day.

Chocolate coconut tarts look truly amazing. I can almost taste it.

Peanuts and chocolate are so good but they’re a lot like chips: can’t have just one. 😛 And I can’t even be around soft pretzels. Can not resist. I don’t even try.

  13. Jessica

No pie, but I did have chocolate mousse.

I find those calorie tracking sites (Livestrong, Sparkpeople) useful, but so frustrating. I do a lot of recipe cooking, rather than composing meals from simple ingredients. It gets tedious to enter everything. It would be a lot easier to calculate something like “1 filet of fish, 1 cup carrots, 0.5 cups rice,” but we just don’t eat that way.

Delicious looking tarts! Glad you got some extra work. I didn’t know about the outsourcing. Seems like everything is fair game these days… Good luck holding back the snack attacks! I get them too, especially around peanuts.

  15. Alissa

That tart looks So good! I love your honesty in your posts. You have your good days and your not so good days like the rest of us. It makes me feel more normal. 🙂

  16. Jen

Wow. The chocolate/coconut tart looks incredible! I know what you mean about the urge always being there. I think that’s something I’m going to have to deal with for the rest of my life.

What a great idea to read blogs while working out. I am going to have to try that, it makes so much sense. 🙂 I like brussel sprouts but yours look so yummy! The new schedule sounds doable and having most of the weekend off is definitely a good thing. Do you already have the job? When do you start? Hope your having a fantastic week!
