Frazzled brain

Whew.  What a day.  Or last couple of days.  Thank goodness for post scheduling so that I could have the meditation post from yesterday ready to go!  I am glad I am not the only one with the meditation-challenged mind.  It makes me feel less like something is wrong with me LOL!

I let myself sleep in a little bit this morning to the tune of almost 7 am, which was quite nice.  I am not sure if letting myself sleep is the right term as I don’t set an alarm, I just wake up early.  So let’s just say I slept a little later for whatever reason today.

I wanted waffles for breakfast, but I also kind of wanted a 1-minute muffin. The solution? Put the 1-minute muffin batter into the waffle iron!

It came out a very pretty shape.  Topped with blueberries and coconut butter.  I like the texture of this better than the microwave, too.

With John gone, it has been busy around here.  I had to watch over his business and do my own work.  Luckily or not, I got accidentally erased from the system at my job in the late afternoon yesterday so I couldn’t log in to do more work last night.  That was fun to try to get straightened out today, let me tell you.  It was a multi-hour process.  Which has now put me behind for the week. calmblueoceancalmblueoceancalmblueocean

At least my eating has been good these last couple of days.

I set up some beef broth yesterday, where I had soup bones from the smokehouse and put them in a pot with water, onions, carrots, and celery and let it simmer for a couple hours.  I ended up with some tasty beef broth.

For lunch, I heated up the broth and added some of the meat back in and stirred in a tablespoon of cream for body.

It was good!  Broth isn’t really that hard to make and mine is super low sodium.

On a side note – The weather is getting a little warmer now, but could we please get a little more sunshine?  Or how about any sunshine?  We had hopes to ride to bagels tomorrow, but the overnight low is supposed to dip back into the 20s.  Le sigh…

I stopped for a latte break.

I look kind of guilty.  What is up with that?

I can be very scatterbrained when John is gone sometimes.  I had actually left my keys in the front door lock from Sunday night after I got back from my sister’s until Monday afternoon when my mother saw them dangling from the lock when she came over! 😯  The dumb thing is that I went out that door again to get the mail on Monday and still didn’t seem them hanging there.

Here I slept all sound and happy not knowing that.  Best part of today was John arriving back around 4:30! I was so happy to see the car pull into the driveway. Our little family unit is complete again and maybe my brain will unfrazzle.

I had a hankering for sweet potato for dinner, so I had popped one in the toaster oven to bake up.  I find the sweet potato to be much sweeter baked than microwaved, does anyone else?

I topped the potato with Laughing Cow and some cooked chicken with a side of sauteed broccoli.  I then proceeded to mash it all together to eat :mrgreen:

John bought me a treat, which he said were very good.

He was right.  They are good.

    I can’t recall leaving my keys in the door, but I have had to knock on a couple of doors to let people know they had…once it was even around midnight, but I just couldn’t go into my apartment without alerting them…they were glad!

    Yay to John being home!!! Nice treat that he brought you too. We had a bit of sun today, but lots of cold wind…come on spring!

    Hope you are able to catch up on your work!

    Never left my keys in the door lock. But locked my car keys in my car 3 times in one week.
    That Chocolate covered Macaroon looks yummy.. I can almost taste it!
    Your laudry room and pantry is looking good by the way. I like the middle tile too.

    I can’t remember if I’ve ever left the keys in the door. I pretty much can’t remember lots of stuff, so it’s entirely possible 🙂

    Your muffle DOES look pretty! Love the colorful toppings on it, too.

    Dang woman, you WERE frazzled! I haven’t left my keys in the front door but my husband has. We’ve also left the house with the front door wide open, and the garage door open as well (separate occasions) – nice to know we live in a safe neighborhood, as nobody robbed us! 🙂

    No I haven’t ever left my keys in the door but I have left the front door wide open, taken my kids to school and come back home to be totally freaked out by the open door. Scary!

    Yes but on the inside or I forget to lock the door after my late night walk with Bella. Worst thing that happened was that I went outside to throw something away, didn’t have my keys with me and the door closed and R. wasn’t home. Luckily the door in the back was open so I had to climb over a wall to get into the garden and could get back inside 🙂

    Glad to hear John is back home safe.

    I never cook in the microwave, I use it to heat up things but that’s all.

    I’ve never left them in the door but every other place i have! LOL! I have to agree with the sweet potato thing . It was quite a surprise when i tried to nuke one , didn’t taste near as good.

    Mr. Helen – the security king – does that all the time with the keys! In fact it has gotten to the point where I check before we go to bed. But worse, when he was out of town recently? I left the garage door open all night! Not so worried about theft as I am about skunks getting in there.

    Have you ever had a chocolate dipped macaroon from Godiva? If you ever get near a Godiva store you should check to see if they have them. I always choose the dark chocolate dip. There may not be a more perfect cookie on the face of the earth.

      I have never had a Godiva macaroon. I am thinking I need to make some this weekend with the coconut obsession I have had as of late.

    That waffle is a beautiful star shape & looks delish! AND, I love you calming words – to me it spells Hawaii! 😉

    OMG, Lori, with age, I forget stuff all the time – thank goodness not the forgetfulness that means something “bad”…. I can find my way home!

    We live in the “sticks” so we don’t even lock our doors – don’t think we have in 10 years now that I think about it!

    That doesn’t mean I haven’t lost my keys . .. TWICE!

    I thought about you this morning as I was getting my jalapeno cheddar bagel for BAGEL WEDNESDAY . . . my favorite breakfast of the week! 😀

    I’ve not only left the keys in the door, I also have been known to fall asleep with said door standing wide open and only an unlocked storm door standing between me and an axe murderer. 🙂

    Wishing you warmer weather soon! We’ve got warm temps here, but gale force winds to go with them. I keep telling myself it will calm down soon, but I’m not known for my patience. Not with weather, anyway. 🙂
