No-oodles and sleep masks

Monday already!  John and I lifted our No TV ban last night.  That was 7 days of no TV.  I honestly hardly missed it at all except for in the mornings when it is my habit to turn on the TV after my shower to check the Weather Channel.  Nice to know that if we had to get rid of the TV for whatever reason, I would be fine – just don’t take away my internet! :mrgreen:

I slept in later this morning until 7:30.  I had trouble sleeping last night.  The full moon filtered in and kept me awake.  We are going to do something about the light tonight.

So, I got up and decided to get right to work seeing as we have been so busy, and we still were!  Feast or famine and I will feast as long as possible.

I did break after a bit and made up breakfast.

The pumpkin cake topped with coconut butter and peach jam!  Gosh, I am liking this!  It does make me a little thirsty, though, which I think is from the coconut flour?  Keeps me full!

Lunch break.  I made a different salad today, how about that?  Last night I made up a honey mustard dressing.

I used 2 tablespoons each of mustard, macadamia nut oil, honey, and apple cider vinegar.  Since they are all equal parts, you can make as much as you want.  I added a little bit of salt and pepper, shook it up and let it sit in the fridge overnight.  The flavor was much better today.  About 45 calories per tablespoon.

I had cooked chicken and a chopped hard boiled egg and added the dressing.

Porch lunch!

After doing more work this afternoon, I grabbed a date and then headed out for a bike ride.  I would have gone tonight, but rain was in the forecast.  Catch as catch can.  That seems to be the biking motto this year.

Solo ride for froyo.  Coopers Cave should be called The Place of Too Many Choices.  This is only part of all their flavor choices.  They customize yogurt and soft serve for each person.

I chose to get rum cheesecake topped with toasted coconut!

I then booked it home.  Total miles – 15.1.  Average speed:  13 mph.  Calories burned 464 (buh-bye yogurt, and then some).

Then it was back to work until dinner time.  Pixie always steals my seat when I leave.

I just always have to get at that tummy with my hands when she rolls over like this. Too tempting.

I decided to give another psuedo noodle a try for dinner.  No-oodles.

Long-time readers my remember my dislike of the shiratake noodles.  However, these are made with yam flour (aka glucomanan).

The noodles had somewhat an odor in the bag, but not as strongly obnoxious as the shiratake ones.  I made a cream cheese sauce with

  • 2 tablespoons of neufchatel cream cheese
  • 1 tablespoon of butter
  • 1 tablespoon of milk (1%)
  • salt and pepper

Quick and easy sauce that was, too!  I tossed the sauce with some steamed broccoli, cooked shrimp and the no-oodles.

Looks pretty good, no?

I did like the sauce.  The noodles?  Okay, but still with that odd texture like gummy bears or something. They don’t have the toothsome-ness of pasta.  No way around that.  I doubt I will purchase them again, but they weren’t bad.

This was a lot of food and I wasn’t hungry for my planned pear, so I am saving that for tonight’s snack.

I did sneak out on a mission for Operation Sleep to KMart and found this!

A sleep mask! I just never thought to look in the froofy bath section for these.  And it is bamboo and earth friendly to help me sleep even better 😉  $3.99 is much cheaper than buying new light blocking window coverings.  Now we will just see if my tossing and turning self can keep this on overnight.

    I say ewww to shiratake noodles, too!

    I hope your sleep mask works for you! I starting using one a few months ago and I have NEVER slept better!!! I even have my oldest daughter using it and she loves it, too!

    I’ve been sleeping with an eye mask for about 8 years now and it makes a huge difference for me! It really helped with my insomnia. Didn’t cure it entirely, but helped!

      I am so looking forward to going to sleep tonight now LOL! I can’t believe they were a Kmart, too. Right under my nose.

    I am very eager to hear about the sleep mask. I have trouble sleeping too AND we have the light on top of that…

    I am not a pasta or noodle person so I don’t have to worry about that.

    Make sure you let us know how that mask works! I’ve often thought about getting one but I always think I’ll keep picking at the mask in my sleep or it will slide off and move around. Would like to know if it works. I have a very unfortunate bedroom window where the blind ends 2″ from the bottom of the sill – so there’s a lovely little sliver of light that hits me smack in the eyes around 5am. My curtains aren’t thick enough either. Time for more shopping!!

    Very jealous of your yogurt place. Here we have full-fat ice cream or diet loaded with all kinds of chemicals.

    We haven’t been able to see the moon what with the clouds…

    I have to have a bedroom that is as dark as possible to sleep. No, I do NOT want the sunshine and birds to wake me up – or the moon for that matter! So I have room darkening honeycomb shades behind my insulated dark brown curtains. Works pretty well.

    That yogurt looks yummy, we use to have a yogurt place years ago but it didn’t last 🙁 Pixie is such a cutie. Hope you got some good sleep. I’m not sleeping the best myself these days. I’ve yet to try those noodles maybe next time I’m at the store I’ll remember.

    That are a lot of flavours to choose from, would be difficult for me to make a choice 🙂

    Hope the mask works for you. R. has had a job for a couple of weeks where he had to work night shifts and we bought blindfolded shades for our bedroom but have to say we hardly use them. Curtains just will do for us.

    Wow, that’s a lot of yogurt choices! I’d have an awful (wonderful) time choosing!

    I hope the sleep mask helps. If you’re like me, a cumulative lack of sleep sometimes reduces the better sense I have when it comes to snacking. 🙂

    Hi Lori, I came over to your blog to get your protein pancake recipe, and realized I hadn’t checked in last night! So I decided to try your pumpkin cake instead. Very interesting. At first I didn’t like it that much, but now I’ve finished it. So I must have liked it. I wonder how it would taste baked instead of microwaved. I think that’s what I don’t like that much.

    I had gotten some coconut flour on my trip and was anxious to try it.

    That frozen yogurt place is amazing with all their choices. You made a good one though! Pinkberry has a new flavor called salted caramel. I had a sample last time I was there, and am anxious to go back and try it.

    That salad dressing is the same percentage of ingredients as my favorite dressing! I’m guessing the macadamia nut oil does not solidify in the refrigerator? I like that you can vary the types of mustard/sweetener/oil/vinegar to give it different flavors.

      I find the cake tastes better as it cools, which may be why you liked it more as you went on. You could bake it and I am sure the texture would be even more bread like. I am just not very patient LOL!

      Mac oil does not solidify in the fridge. It gets thicker, kind of like olive oil does.

    I’ve found with those type of noodles that I need to marinate them at least overnight – like with a tablespoon of teriyaki sauce or something before adding them to stir fry – they have a better texture for me then.

    And my husband and I have black curtains that shut out all light – so much so that I can’t see my hand in front of my face its that dark – only problem is getting up in the morning when its bright sunshine outside – it still feels like night!

    I have the same issues with light waking me up in the morning since the time change too. I’ve taken to just sleeping with a washcloth over my eyes (not wet or anything) and it has helped TREMENDOUSLY. I’d like to get one of those masks you can heat or keep cool in the fridge at some point, but the cloth is fine for now. Hopefully the mask works for you.

    And you’re right, Coopers Cave has way too many flavors! I can’t ever handle all the choices so I stick with my twist, haha

    Pixie is so adorable – big fluffy bellys MUST be rubbed!
