Hello brand new week – nice to meet you!  I miss the light in the mornings.  It feels much earlier than it really is when I get up.  I decided to hit the gym on a Monday this week.  I have been very flexible with my workouts pending the weather since I joined this gym.  I also like the 7 to 8 a.m. hour at this gym as it is not very crowded.  Yay!

Looking at this, I forgot to do a shoulder move. Funny, because I wrote this out last night to do and still forgot something. D’oh!

I made up some pumpkin oats and topped it with coconut butter and a sprinkle of the pumpkin granola I made yesterday.  I am not sold on the recipe for this granola, so I don’t know if I will post it or not.  It’s needs to be sweeter.

Work was surprisingly busy this morning.  I ended up transcribing the same 2 doctors all day.  All day.  That is a little tiring on the brain not having any variety.  At least one of them was my favorite  :mrgreen:

Lunch break.  During all my meal prep yesterday, I also cooked up eggs because  I had a hankering for egg salad.  Straight up egg salad for me.  Just mayo, mustard and a pinch of salt.  No pickle, no celery, no pimentos.

Paired with  a cucumber and some Nut Thins.

I am in love with these crackers!  Gluten free and made from almonds.  Yep, processed, but I don’t have the time to make my own crackers, although I would like to give it a whirl.

It was a gray and cloudy afternoon.  Okay, that sounds like the opening of a really bad book...  I was ready for the lattes today!

After I finished up work, I headed up to practice the guitar before dinner.

I have to say that I am quite enjoying learning the guitar.  I need to write a post on that one of these days.  I have learned a lot from it about not expecting perfection.

I came down to make up some dinner.  I used some of the brown rice that I made up yesterday (our fridge is jammed with food now).  I cooked up some ground beef, added the brown rice and some salsa.

This was actually pretty decent for cooking on a whim.  It reminds me of the filling to stuffed peppers without the peppers!  Next time, I will add some cheese and sour cream – that would be awesome!

We took a walk after dinner and it was darkening up so fast.  The clocks get turned back in another week, right? Then it will be dark before dinner.  Sigh…

Football night tonight and I have a date with one of my pumpkin scones!  I will post the recipe tomorrow.  Just a nice simple day today.  I like those days.

    Why thank you, Lori. I had a note on my to-do list to make out my exercise schedule for tomorrow. Now I don’t have to! 🙂

    Not an egg salad fan. At all. But I do love the Pecan Nut Thins! They’re yummy and filling.

    Looks like a great day!

    I like egg salad different ways on different days! I like it with mayo, mustard, garlic powder, salt, and pepper…sometimes some finely chopped onion.

    I also like it rolled up in ham slices or with cooked bacon bits, celery, and pickles in it. Yum! I want some egg salad now.

    I am looking forward to it being lighter in the morning…at least for a little while.

    Question is, did they USE the fashion tape on you?

    It’s nice to cook ahead – makes life easy. I was hard boiling eggs over the summer and ran out…thanks for the reminder. I like my egg salad just like you made yours today. Plain is good!

    You’ve got almost 3 weeks ’til DST ends! (Nov. 6) So enjoy those evening walks while you can! (I would be happy if it were year round, but I know early risers prob. feel just the opposite…)

      Thanks Marion! I am going to be making a couple videos of what I have worked on for the guitar at the end of the year.

    NO EGG SALAD. Eggs + mayonnaise = YUCK. Other than that, it looks like you had a very nice light day of food! Waiting for the scone recipe!

    LOVE egg salad with or without fillers. I should look for those crackers as I’d love them and lately I’m feeling like carbs and sugar are my enemy…or maybe it’s TOM because it came, uninvited of course, early and I’ve wanted nothing but crackers, chocolate and diet soda for the last 4-5 days…Gluten free might help this???

    Egg salad is one of my favorite things! I like mine with mayo, dry mustard powder, lots of black pepper. I don’t like to put things in it because it makes it watery and there is nothing worse than weepy egg salad. BLARGH!

    I love egg salad, saw a recipe for it in my new plan and will try it out soon.

    We have two more weeks before the clock goes back but already it’s dark when I leave the house in the morning and in the evening before 7 pm it’s dark again. I don’t really mind since I love fall and winter but it’s hard to get some daylight on my skin on weekdays, that’s something that can bother me.

    This morning darkness is making it very difficult for me to actually get up and get going – even on the weekends I’ve been sleeping later. I seem to remember going through this every year at this time though 😀

    Egg salad = YUM. My boss used to own a little lunch place and the manager there made the best egg salad. It was so good I’d go buy a container of it to put on my green salad. I was sad when that place closed.

    Love egg salad! Hannaford makes AMAZING egg salad (I’m pretty bad at making it myself). It’s like $5 for a small container, but it’s worth it!

    And your rice concoction is similar to what I made a lot only I use pepper and onion marinara sauce. I should try it with salsa though!

    I like egg salad but I rarely have it. Might be worth thinking about putting back in the rotation though for a change.

    Still waiting on the edge of my seat for the pumpkin scone recipe. *drool*

    I’m not liking the shorter days either. Now when I drive into work at 6:30 it’s completely dark outside!

    Hi Lori, I LOVE the guitar picture!!!! And Pixie is lovely as well. I love egg salad, with mayo, celery and relish. I haven’t had that for a long time.
