Welcome to Thursday!  The week is almost over.   Pixie says “Wake me when it is Friday!”

I have been using my steroid drops in the eyes for a couple days now, and they are starting to look better!  After a couple months of redness, it is weird seeing more white in my eyes.  What I don’t like?  How nasty these drops taste.  About 5 minutes after putting the drops in my eyes, I can taste them in the back of my throat and they are bitter, bitter, bitter!  Plus it makes my nose run. Yuck.  I have to use them 4 times a day.  I’m not complaining too much, though.   😉

I also want to take a moment to thank everyone for their comments and thoughts via email, on the blog or Facebook.  To those people who think you can’t be friends with someone if you haven’t met face to face, I say pooh-pooh to them!

I made up some ricotta puffs for breakfast.

Topped with a wee bit of lemon curd.  So good!

Work was a little slow, so I was able to catch up on some blogs and read around the internet today.

So, I am sure you all heard that Paula Deen came out with the fact that she has a diagnosis of diabetes.  It’s not all that surprising.  Whether or not her diet itself played a role, she has a lot of risk factors for developing diabetes.  I have sort of been waffling on either side of the issue with regards to her keeping quiet for 3 years and then partnering up with a drug company.

I can understand why you might want to keep your disease private, because it really is nobody’s business – at all. Yes, she is a cook on TV, but she isn’t ever advocating to eat her foods to be healthy.  I would highly doubt anyone looking to be healthy would be trying all of Paula Deen’s recipes.  On the other hand, she is a very public persona and she could certainly use her platform for diabetes education more than partnering with Big Pharma.

John brought up a good point, though, that it might be helpful in a lot of ways because a lot of Paula Deen’s regular audience and fans are the people that probably would be needing diabetes medication and it is a good way to push them to get more information.  I do like that she is not vilifying certain foods like Alton Brown did when he did a complete 180 on his diet.

Time for lunch break!  I mixed up some cooked chicken with light mayo, curry powder, chopped apple and grapes.

With Nut Thins.  It’s one of my GF days.  I actually really like this chicken salad, but only make it when grapes are on sale and I buy them.  I like to be frugal.  My sister calls me cheap LOL!

Afternoon snack time!

I actually had 2 pieces of pineapple, but one went into my mouth before the camera got here.

I did win the fantasy football picks last weekend and normally we eat out Thursday nights, but I have not even thought where I wanted to go!  So, we ate at home instead.  That meant a go-to meal, which is pretty much an omelet for me.

That is sausage and Laughing Cow in there.   The filling kind of fell out when I plated it up.  Still tastes the same, though.

Tonight is getting old school with exercise!  I am going to dust off the Leslie Sansone WATP 3 mile DVD to do.

    I’m glad the drops are helping your eyes. It still amazes me that I can put something in my eye and taste it in my mouth. But I’m easily amused. (Ha! Just saw Shelley’s comment. Thinking the same thing)

    Paul Deen, I wasn’t shocked that she has diabetes but only making it public to promote a drug? Hmm…not sure about that one. How about tyring to change the diet? Donut hamburger anyone?

    *sigh*…I hardly have time to form an opinion on the whole Paula Deen thing, let alone write a response. But my thoughts are very much in line with yours…not too crazy about how she’s jumping in with Big Pharma. Especially after reading her responses to the author of the “Diabetes Mine” blog’s interview questions.

    So glad your eye is doing better, and that your tests came up normal!

    Glad you won your fantasy football picks…ruh roh, looks like we’ll be rooting for opposite teams again! 😀

      I don’t have an NFC team now. I don’t necessarily care about the Giants. I just don’t want to see another Giants/Pats super bowl. Giants/Ravens I can get behind!

    I did not know about Paula Deen. I hope she really learns how to take care of herself and does not just take a pill and continue on the same path…

    Thanks for the cookbook link! I need some soup ideas. I ordered it and it will be on my kindle tomorrow when I visit Starbucks!

    I’m glad your eyes are better too. And is it weird that as a nurse I had never heard that you could taste something you put in your eyes? Man, I am uninformed tonight!

    I never liked the way Paula Deen cooked (although I thought she was hilarious when she was on Oprah) but I think it would be awesome if she could use her fame to encourage people in the same boat to eat healthier, and not just rely on medicine to control their diabetes.

    I had to google Paula Deen LOL she’s not famous here in Holland, in fact I never heard of her.

    Glad to hear the redness in your eyes is less. Hope it will be gone soon and you can stop medication.

    Your meals look delicious as ever.

    And I agree that you can be friends even though you never met someone. I definitely consider you as a friend!

    Glad your eyes are improving – eye issues are no fun! And I hear you on tasting the drops after they go in – I’ve had that before with drops. Ewww.
    I don’t buy grapes unless they’re on sale – and I’m “frugal” too! 🙂

    I was on the fence about Paula Dean but in the end I just figured, she is her own person and can do what she wants. It’s not like people HAVE to make her food 3x a day, or watch her shows, or buy her cookbooks, but she does have some awesome recipes. Plus maybe she wondered how the diabetes would affect viewership. Maybe she thought diet/exercise would get rid of it and then it wouldn’t even be an issue.

    Anyway, SO glad your eyes are getting better. I think it’s funny/gross that you can taste the drops!! Goes to show how connected everything is and you have to be so careful (in general, medication not included) about what you put in and on your body to keep it working in prime fashion.

    True confession…I love Paula Deen. While I can definitely understand where the haters are coming from I just don’t see blaming her for a nationwide epidemic of diabetes and obesity. I would assume people have enough common sense to see that Krispy Kreme bread pudding isn’t healthy and to realize that just because she is cooking it doesn’t mean you have to! I watch her show often and can’t even eat 95% of the recipes because of celiac. Should I go to my doctor and say I can’t stay on the GF diet because the Food Network keeps showing gluten? Sorry for the rant, I think people just need to take responsibility for their own actions. 🙂

    Glad your eyes are getting better and that it wasn’t anything serious! Ugh on the drops though. I’m very sensitive to bitter tastes. 🙁

    Hi Lori, SOOOO glad your eyes are getting better already! Blech to the after-bitterness though. Hang in there!!! LOVE “the light is so bright!!” picture of the lovely Pixie. AWWW. I’m a produce on sale, or at the “frugal market” (I actually make a special trip each week because it saves so much money) girl too. Most of the time. Fresh carrots (there is just no comparison to fresh) and funky new veg from the Farmer’s market are my exception to that rule… Have a wonderful Friday. PIXIE…WAKE UP…..IT’S FRIDAY!!! 🙂

    Paula Deen – I said it already – 3 years cooking & promoting that food after she knew – I think just plain bad. She should have come out & then if she still wanted to cook it – fine BUT she could have used her platform to help people make better choices & yes, moderation! I don’t like that she said nothing.. I know people know it is bad for them & they watch her for the stuff she cooks but it was a chance to inform others…. them taking money from the drug company rather than maybe partnering with a healthy lifestyle group… just my thoughts.

    I still don’t know what to feel about Paul Deen, but I think its funny that one of her sons has a new show called “not my Momma’s food” where he makes her dishes healthy.

    Hey Lori,Your chicken salad recipe. It’s funny how we (or at least I) forget about yummy easy meals that we like. Thanks for the picture reminder. I’m hoping Paula Deen takes in some of the negative observations people are making and changes her approach. I think she’s entertaining and a good cook, I hope she can be around for a lot longer, offering recipes that more of us can use without major changes.
