Countdown to vacation

Lots of rain last night. What is up with rain in January? My garden is going to struggle this winter, I think. Rain is not good for gardens in this climate as the roots will rot.  They need to be frozen and under a blanket of insulating snow. Guess that will be an excuse to buy more plants this spring!  I headed out in some foggy weather to the gym.

Then treadmill walking. This was one of those days where I felt huge at the gym. You know those days? When the little women are there jumping around. Even though they are much taller than me, I still feel like a behemoth around them. Ugh. Of course, I could kick their asses if need be, I am sure. I’ll just be smug about that LOL!

Breakfast time was oatmeal!  I just cooked some oats and whisked in egg whites.  Now for a topping that looks like something it isn’t.

This is coconut butter with a spoon of lemon curd!  It either looks like a sunny side up egg or that I opened up a Cadbury Cream Egg on my oats  :mrgreen:

It’s been busy at work.  At least on my accounts.  We got an email from Disney today:

(Yeah, it has John’s last name on there since he booked the trip – even though I paid for it – I’ll set aside my feminist nature for a minute on that one.)  One thing I love about Disney is that they treat you right.  Everything has the guest in mind and one reason I just love staying on the property and letting them take care of everything!  I cannot wait for vacation!  John and I did not go on a vacation all last year, so we deserve some time off.

This little portion is 250 calories, which is annoying, but it is pretty good.  I need to try making my own paneer because we don’t have any stores here in tiny town that carry it.

Pixie was my lap partner today. Like that is anything new.

It was a warmer day today, but still a good day for a latte.

I cannot even tell you how happy I am that my eyes are normal now!  I am hoping that the redness won’t return with the end of the eye drops.  We still don’t know what caused the reaction, but maybe it was transient (fingers crossed).

John was out in the late afternoon with his math learner and asked me to meet him down the street for a slice of pizza for dinner when he finished.  It was a nice night for a walk!

Now settling in for some Downton Abbey tonight after I do my literacy lesson plan.  I caught a bit of this on PBS a couple weeks ago and now have it in my Netflix instant queue to watch.  It’s a good show and I just love the setting!  With snack:

Chocolate covered almonds.

    I started watching Downton Abbey this past weekend, and I have only one episode of Season One left. I am hoping to be able to catch up this week so that I can watch the show when it comes on Sunday night. I am loving it!

      We don’t go on all the roller coasters, but some of them. I am kind of a wuss with the roller coasters. Big Thunder Mountain is one of my favorites. We can’t wait to try the Everest ride that is new!

    Yes, I agree about Disney. I was just thinking about that today actually. My brother and sister-in-law went on a Disney cruise, and they said the customer service was just fantastic. You will have so much fun, and we all will enjoy reading about it!

    I’m waiting till they start airing Downtown Abbey here. I’ve read about it and think I’ll like it. Once upon a time started this week and I recorded it but have to watch it.

    You had me fooled with breakfast. My first thought was ieeekkks an egg on her oatmeal 🙂

    Question for you: I make a pancake regularly for breakfast now. I use almond flower for this. But I have coconut flower in my cupboard too. Do you think coconut flower is good to use for a breakfast pancake too?

    Only a few days left, I’m excited for you too.

      Coconut oil can be used for pancakes, but it absorbs liquid like crazy, so you can’t just sub it out for another flour.

    good to know that your eyes are clear now 🙂 yes sometimes i really wish I know a bit better about why my body behaves the way it does. The docs are totally clueless, and I don’t know what to say about that. Is it not why they went to med school?

    I am addicted to dark chocolate covered cashews in the bulk section of the grocery store. I’ve decided I cannot buy them anymore because I can’t ration, they are super-pricey, and I have no self control. 🙂

    We went on our first Disney trip last summer, to Disney World in FL, and it was worth every penny. You’ll have a blast!!! It should be very beautiful this time of year, right?

    Enjoy that vacation! Out of curiosity, how do you handle the urge to splurge on food when you are traveling? Do you get hit with that, “Well I’m on vacation so it’s ok to have….” impulse, or are you immune to it now? I always have a hard time when pulled out of my regular environment. It just makes me feel like it’s ok to go overboard, even when I know it is not and I will pay for it later!

    I have just started reading your blog, and I love it! I am also a medical transcriptionist, 33 years now, so I am curious as to who you work for or if you have your own accounts? I work for Nuance, and we are very busy at work right now, too, although part of the reason is that we are supposed to be keeping the lines as clear as possible to prepare for the big move to a VR program next week, I think. It’s pretty rare to run into another MT so I just thought I would say hi! 🙂

      I work for one company, but as an independent contractor. That way I don’t have a set schedule (although I set one for myself). I worked for a company that was mostly VR, and honestly – I can be more productive with straight typing!

    On an unrelated note… I made your “Meatless” Balls and used 1 oz of coconut flour instead of 2 oz of almond flour and they turned out sooo yummy!!(I added a little garlic powder). I calculated the calories and each ball is 88 calories. Not bad! Thanks for the great recipe! 🙂
