What’s Blooming?

TGIF!!!

On Fridays I try to let myself sleep in as I don’t go to the gym, but it seems I wake up even earlier than usual on Fridays.  Boo!

I made up some coconut bread pudding for breakfast.

Topped with coconut butter.  It’s coconut all around for Friday  :mrgreen:

I also didn’t want to work.  So not motivated to work, especially when the sun was shining!  So, after slogging through some work, I decided to go out for a walk.  I did a good inspection of my garden, too.

Looks mostly brown, but there are signs of life!

These are some irises (can you see them?). I got these from my neighbor a few doors down.  They had a garage sale and he had a bunch of rhizomes that he dug up. I have no idea what color they will be.  My other irises that I purchased also look like they are coming to life.

I really don’t know what the hell this is.

There are a few of these, so I think they are on purpose. I sort of remember that I might have gotten some mini daffodils a couple years ago that never came up, and now they might be 2 years later?

Nary a tulip to be seen yet, though.  I bet those will start popping after this weekend when we get some warmer weather.

Lunch time!  I made up the apple topping I normally do, but with a pear instead and put it on greek yogurt.

I can see this becoming a rut lunch for me  😀

Work dragged on and on today.  🙄  I hate days like that.

John saved me with a latte, which I had with some mixed nuts.

I was pretty hungry when dinner rolled around.  Topped a potato with a laughing cow wedge and some BBQ turkey.

Tasty!

Tonight’s snack is these chewy coconut balls. Made from this recipe.  I made half a recipe and cut down on the coconut.

These are very, very good!  And could be trouble  :mrgreen:  I also had about 2 balls worth while I was making them.  I recorded them, though. That’s the nibbler coming out.  The only nibbling I have done in 2 weeks, so not too bad.

Tomorrow is the last 28 Day Shapeover workout! I can’t believe it has gone by already.

    Wow, on my computer those coconut balls have a green tinge, and they look like something else. Not edible… anyway, I clicked over to the recipe, and they sound delicious. One of those healthy treats that are definitely not calorie free. I want something like that tonight. Might just make a one minute muffin for ‘dessert.’ with you-know-what on top :))

      They are fairly calorie dense. Each ball is half an ounce and about 75 calories, but really good! The color is just the lighting at night in my kitchen 😀

    Hi Lori. BIG yay that some spring plants are slowly peeking through the winter overgrowth. I’m excited to see what the plants from the garage sale turn out to be. And what IS that spidery looking plant. So fun. Have a wonderful weekend!!!!

    Have you seen the recipe for the Vegan Energy Bites going around? I bet you would enjoy those a lot too as they are nut based.

    I feel like Spring is right around the corner with some plants popping up and I swear I’m seeing buds on the trees. But this morning it’s 29 degrees so it doesn’t FEEL springish today!

      I was thinking about putting some protein in this mixture. It reminds me a bit of brownie batter (probably why I like it so much).

      It’s cold here today, too. Hello spring??

    Love the green balls! I’d eat ’em too–they sound good. Think it’s great to have a job where you can get up and go outside at will for a wander. How fabulous. Hope the tulips come as expected. Down here in NYC the worry is that the turtles in Central Park will think it’s spring and come out of hibernation, and then a cold spell will come in and zap them. Hope not!
