Pineapple chicken

I should have the Healthy Heart recap post up tomorrow.  It is just taking a little longer than I thought to get it put together.  Then I will draw the winners!  Along with some personally roasted coffee (which I just did today – fresh!), there are 2 other prizes that will be given away.

I tell you, I will be so glad when John comes home from his Vegas poker trip tomorrow because I have been running around all crazy.  He really can be a very good stabilizing force in my life. 

Last night I hit a really frustrating spot with the rehab. I was working on the plumbing and it just wasn’t going together right. I really wanted the sink water back on and then I found out I needed one more part -  a 98 cent part, to be exact – before I could get the drain in place. Plus I was getting some leaks from the connections and it was really pissing me off.  So, I decided to take a break and do the trim (chair rail and base molding). The last 2 things to do in the room are the sink hook up and the trim.  Anyway, I have done miter cuts with baseboard before, but not with chair rail molding and I cannot for the life of me get the cuts right with my miter box. I so wanted John’s brain to help me sort it out. I ended up with tears of frustration and I decided to just stop for the night.  I really wanted to get this project done before John got back, but I am supposed to be *enjoying* it and I wasn’t. So what does a girl on the verge of tears do? Watch the season finale of Downton Abbey. Crying

I was not surprised at the ending as I knew the actor playing Matthew wasn’t going to be back and there was no way he could be out of the picture without dying. That wasn’t so sad to me.   For me, the saddest moment of the whole episode was when Branson was crying over Sybil and how he couldn’t go on without her.  So, so sad.  And I yelled at the maid to get her hands off him LOL!  And does anyone else feel like Rose is the Cousin Oliver syndrome from the Brady Bunch?

I made the best single serving dinner tonight. You know how sometimes the easiest  thing is the best?

Teriyaki Pineapple Chicken

  • 1 teaspoon coconut oil
  • 1.5 cups broccoli florets , cut small (I use my beloved frozen baby broccoli florets from Bird’s Eye)
  • 1.5 tablespoons of bottled teriyaki sauce of choice – or any stir fry sauce, really.
  • 1 cup  (165 grams) of fresh pineapple chunks. (really makes the difference)
  • 4 ounces of cooked chicken breast, diced.

In a small saute pan, melt the coconut oil and add the broccoli florets. Since mine were frozen, I slapped a lid on there and cooked for about 10 minutes. You just want the broccoli cooked through. I cut up the pineapple while the broccoli was cooking. Add in the teriyaki sauce, chicken and pineapple and stir to heat through.  I should have used a bigger pan! I had food go overboard trying to stir this.

365 calories for this plate and it was soooo tasty. I love fresh pineapple. You calories may vary depending on the sauce you used. I used House of Tsang brand.

 

After I get my chores done, I think I might do a little relaxing tonight and some flower shopping online for the garden since the weather is crappy rainy/snowy/cold outside. I need thoughts of spring.  And John comes home tomorrow! Yay!

    I cried when Sybil died too. Which is odd because when they sort of wrote her off the show when she went to Ireland I thought “wow, don’t miss her at all”. Then she died, and I was like “now there’s a big hole in the house!”

      Yes, I watched the finale last night. I was most upset earlier in the season about Sybil because that was my favorite story line! Argh!

        Found out that the actress playing Sybil had quit for greener pastures too, and they wouldn’t have done that particular ending to her character if they’d known that Dan Stevens was def. leaving as well.

        I think they brought the younger actress/character in because now that Sybil’s gone, they didn’t have anyone quite that young, energetic, and with that particular kind of “look” in the house…

    Sorry you had remodeling woes, but it was kind of nice to know that is just part of the process even when you have experience. Hoping for remodeling pina coladas and palm trees tomorrow.

    Sorry for the reno frustrations. When my eyes start burning with tears, I know it’s time to take a break. 🙂

    I love chicken and pineapple. I’ll even eat it with a dab of teriyaki sauce, but I usually just marinate the chicken in a bit of the pineapple juice for a few minutes. (Unless the pineapple juice drains all over my car seat, as it did a few weeks ago. 🙂 )

    I forgot all about taking a photo from the weekend. I’ll just have to be Not Pictured. LOL

    Love that Pixie is keeping tabs on the prizes. And your latte. She’s a good watchcat, she is! 🙂

    I hate it when a project gets frustrating like yours did – and especially when it stops you from progressing. Probably for the best that you took a break from it (or put it in timeout, as my knitting friends say when a project starts having issues).

    I was more upset about Sybil too when she died. But I didn’t like it that they let 2 major characters die in one season. I would have like to see more what Matthew would have done with the property. If they had to kill one of the sisters it better could have been Edith, I don’t like her storyline very much.

    Sorry about your frustrations but your mental coach will be back soon and help you sort it out. For the record: you are doing such a great job on this renovation. Many men would bow for you because they can’t do what you do.

    It’s so foreign to me that you write about being frustrated over plumbing that you’re working on. Way back at the beginning I would have looked at the bathroom and said, “We’ve gotta hire someone to do this rehab!”

    I admire you for putting together such a yummy dinner when eating solo. I’m pretty bad to keep it very, very simple i.e. cereal, leftover meat/carrot sticks, or (heaven forbid) a Lean Cuisine when Bill is out of town. Maybe you’ve inspired me to be more creative while he’s gone to Spain in a couple of weeks!
