I don’t know about you, but I was not ready for Monday quite yet.

It was a busy day.  I had to get as much work done as I could early because I had to tutor in the afternoon.  Quick lunch break:

1-minute muffin with peanut flour.  Normally I top my muffin with the peanut flour mixture, but I got it to liquidy. Oops.

I’ve been working with another new learner since early February.  It’s going pretty well.  This is my 4th learner in since I started.  Now the coordinator left suddenly and we are not quite sure what is happening.  Still tutoring until we hear anything further.

After I got back, I got some grapes for a snack to work some more (can you sense the work theme of the day??)

Dinner was actually leftovers and something different around here!  Meatloaf.  I don’t know if I have ever cooked meatloaf.  I just used a seasoning packet and egg (no breadcrumbs).  It was pretty good.

After dinner, John and I went out for an evening bike ride.  It was nice to get out on the bikes.

I just got a call from work asking for help tonight, so I need to get back to work and help get the queues caught up!  It’s been extremely busy.  Going to make my latte (or have John make it 😈  ) that I didn’t get this afternoon and commence to typing.

    Yep, I know the feeling only too well. I especially love when I get a call asking me to “find” ASAP these 3 patients and type them right away. Always fun to scan and try to find. I marvel though at how well you get your healthy meals and snacks in while working. I seem to falter when I am rushed with work. Pixie is adorable. Love the expression.

      Digital is nice because if the facility needs a file stat, they just label it as such and it pops to the top of the queue for the next person to grab. It’s just hard when there are 50 stat jobs waiting and the whip is cracking!

      I have to be really careful with my snacks. The bites and nibbles working at home can be my downfall. If I have them planned out, I usually stick to them. If I am stressed and I haven’t planned – all bets are off!

    My work week is a little nuts, too, if it makes you feel any better. Congratulations on 11 miles! Very impressive. You guys exercise me under the table 🙂

    What a way to start out your work week – by working like crazy! Glad you were at least able to break away for the bike ride, but dang…working in the evening does not rule.

      No, night working certainly does not rule, but it has to be done as an independent contractor at times. It does give me flexibility in that way, which is a good thing.

    Wow, that is a BUSY work day. It seems like you had a little more fruit than normal. Is this a new trend? Anyway, it all looks good. I haven’t had one of those muffins for a while. I think I’ll make one for breakfast this week.

    Do you drink decaf when you have coffee in the evening, or are you okay drinking regular?

      Actually I had less fruit than usual LOL! I will have 3 to 4 servings a day and today was only 3. I am not called a fruit Hoover for nothing 😀

      I try to drink decaf at night, but it doesn’t really bother me if I have a regular latte. Regular coffee is a bit too much nighttime caffeine for me. When we go out, I drink decaf, but we don’t have any at home.

    I have never made meatloaf either but funny thing is that I saw a recipe recently in one of the cooking magazines I receive and it’s on the menu next week. I want to try it sometime.

    Ah, I recognized the peanut flour “dip” right away as I frequently prepare it myself. 🙂

    I don’t understand meatloaf. I like all the ingredient that go into it, but the finished product? Can’t do it. But I can do strawberries morning, noon, and night. LOL

    I just bought some strawberries too! I was excited to see some decent looking ones back on the shelves. Over the winter they look more white/pink than red.

    I hope you had John make that latte since you were so busy slaving over late night work. 😉

    I’ve been under a lot of stress lately and it usually does me in pretty fast. Now I’ve been able to stick to my exercise routine a little better and it definitely helps me.

    I love Pixie’s expression. She might also be a bit worried you’re going to bring a bunny home! 🙂

    Guess you’ll be appreciative of that extra work when the check rolls in. You seem so well suited to the work-at-home lifestyle. I did that for a lot of years and absolutely LOVED it.
