Food round up

Seems like the blog is all about gardening and cycling lately!  It’s time for some more food pictures.

Still a lot of the same meals I usually eat. I did my protein waffles in pancake form to change things up.

We made the Dutch baby one day:

Need to make this again. It’s easy and tasty!

I got on a kick for egg sandwiches for a little while for lunch:

When the weather got really hot there recently, I started having protein shakes for lunch.  This one was made with almond milk, applesauce, protein powder and cinnamon:

This one was pumpkin, protein powder, almond milk, honey and cinnamon:

When it is really hot and humid, my appetite takes a dive, so the shakes are a good way to get in nutrition without it feeling like a heavy meal.

Still lots of chicken on the dinner menu:

I did get some brussel sprouts for a veggie change up!

A couple weeks ago, our neighbor came over and asked if it was okay if he trimmed some of our tree branches that were overhanging his garage.  Well, he is 87 years old, so we certainly didn’t want him doing that.  So, John got up there and trimmed them down and I hauled the branches.  Our neighbor brought over a gift certificate a few days later to the Pepper Mill, which we had never been to.  That was very nice of him! I had a crab stuffed baked shrimp, which was quite good.

We have more of the GC left, too, so we can visit again.

I broke out the crockpot at the end of last week and made a Black Bean and Sweet Potato Enchilada casserole.

enchilada casserole

I subbed in pinto beans instead of black beans because neither of us like them very much. My picture doesn’t look as nice as hers.  I used a large can of enchilada sauce since her recipe didn’t specify which and maybe that is why.  Or, she styled it with uncooked ingredients.  Still, it was super tasty and chocked full of beta carotene!  It made enough for 5 meals. We froze 2 meals’ worth and ate the rest over a few days.

And… we broke down and tried some of these:

They were pretty good, but I don’t know as I would necessarily get them again.  I am holding out for candy corn!  I told myself no candy corn until equinox fall on the 23rd? Somewhere around there.

The weekly:

beer

This is a beer brewed with coffee!  It comes in a 10 oz pour because it is pretty intense.

You have seen the usual weekend ride suspects as well.

I really flat-lined during August, but this week the scale moved down and I didn’t really do anything different.  Just goes to show how you can’t really predict anything.  Maybe it was the M&Ms? I was snacking a little bit on cereal again, but I think I got that stopped.

I pulled out clothes that I haven’t worn since spring as it got cooler and I am pleased at how they fit since they were pretty snug back then.  I’ll take any reward 😀

Super to hear about the snug clothes fitting better! Also, I am salivating over that enchilada casserole. I think I might make it sub’ing chicken for the beans. It just seems like what I am craving–fall food.

I enjoy having protein shakes for lunch. They keep me satisfied for a surprisingly long time, plus, easy and quick.

Thank goodness I bought some chicken at the store today, because as always, I am highly influenced by your pictures. And I want chicken now! Oh, the only one not appealing to me is the beer and coffee combo. I laughed at your pumpkin M&M try.

The casserole is good. I bet it would be really good with chicken, but since John is a vegetarian now, that would be only for me 😀 I have been doing baby steps with beans and learning to like some kinds.

I am starting to crave all kinds of fall food now. We woke up to 49 degrees this morning and it makes me want a beef stew or something!

The enchilada soup sounds really good. I’m looking forward to the cooler fall weather so we can start eating soups again!

That was super nice of your neighbor to give you a gift card. It seems like there are more people that like to complain these days and never give thanks when someone does something for them. I’m glad that he was so thoughtful- and you too!

It wasn’t necessary at all for him to do that. It wasn’t that hard since his house a a single level ranch. All of our neighbors have been so great. We ended up in a really nice neighborhood.

I bought candy corn yesterday for my kids, since we are week from the “official” start of fall, and don’t you know two of my three kids asked why I bought it since fall isn’t til next week. Figures… ? ?

So glad your clothes are fitting better! I look forward to that again.

Heck no, your 87 year old neighbor didn’t need to be trimming trees! Lordy. My friend’s 80 year old father was doing that, fell off the ladder, broke his hip and collapsed a lung. Glad you and John took care of your neighbor (and that was very sweet of him to return the favor via a GC).

How nice to pull out fall clothes and have them be loose! You’re doing something right. 😉

He said his son took away his ladder, and I think that was a good idea. He is very independent. Good thing he asked us or he might have done it on his own!

I’m still wearing white. I WILL NOT give up summer until September 23rd. Even then I feel like fall owes me since our beginning summer was horrible right up until July 2nd!! I said that because I’m also refusing pumpkin anything until then. Just say no to fall is my motto right now.

It has gotten a bit cooler here this week so I’ve been thinking about my fall and winter clothing. I actually have no idea what to expect as to fit so I can appreciate your joy at things being a bit looser!

I really enjoy reading your blog, just thought I would mention that the balance is very nice between the food stuff and the gardening and cycling! Also, I feel like you offer such a nice perspective having lost weight and now mostly just maintaining. I’m interested in the protein powder drink, I’ve been losing this year (on and off for many years) but I’ve been on a great roll and up to 68 lbs. off. But, my losses are definitely getting tougher and I read that I might not be getting enough protein. I think I’m going to try to up that by working on those shakes/smoothies whatever. Thanks for your interesting posts! 🙂

Thank you! I do eat a fair amount of protein. I find I just do better in general when I eat more protein. I use an unflavored whey isolate, which packs a lot of protein into each serving since there aren’t other fillers.

That’s really nice of John to do that for your neighbour and sweet of the neighbour in return.

I put away my Summer clothes past weekend because the weather has changed a lot, rain rain rain. I left out a couple of things that I am still wearing this week but next week it’s done with the Summer clothing. For the first time I threw away clothes that I put in the closet every year and at the end of the season I still hadn’t wear them.

    1. Lori Post author

I need to go through my closet as well. I thing there are some things I never wore last winter that I should get rid of. I could use a change up in my wardrobe a little bit. Actually, I think that was one of my goals for the year, too LOL!

Glad to hear about the pumpkin spice M&Ms – I was going to buy some for my step-sons birthday gift box, but decided against it 😀

    Those blueberries looks so good!
