Thinking spring

Daylight Savings Time and spring feels like it could maybe arrive sometime!  It feels more like spring, although looking a bit wintery out, still

At least sidewalks are pretty much clear so walking is much easier now. I think we will be getting more snow in a couple days, but at this point does it matter? LOL.

My inner (and outer) gardener is taking charge with moving spring along. This week I will be starting some seeds:

I don’t really need to start zinnias indoors since they will bloom on their own, but I want to get some started early so I have earlier blooms. The marigolds I just can’t seem to get to bloom before frost. I don’t know why, so these I’m going to do inside.

Had another Instant Pot success with some cheddar broccoli soup. I just put in 1 bag of frozen  baby broccoli florets, 2 cups of veggie broth, and a little bit of frozen chopped onion into the IP, pressure cooked for 15 minutes. Then I added one 12 oz can of evaporated skim milk that I whisked a tablespoon of cornstarch in and stirred in 8 ounces of shredded cheddar cheese (2%).

Sprinkled with a bit of hot sauce. This was really tasty! I’m keeping that one in the wheelhouse. John won’t eat it. The man does not like broccoli, which I don’t understand 😀  I had 4 soup meals to nosh on, though.

Have you tried any of the yogurt flips?

I thought this sounded kind of good and was something different to have for lunch. Seriously, though, what a tiny portion. I bulked it up with 1/2 cup of plain greek yogurt, which also cut the sweet down.

That’s the bulked up version. How do people stay full on these things?  The crunchy topping was quite good. It had these coffee flavored brownie bits that I would like to eat just by themselves.  While good, I don’t think I will have these very often. I can make my own version that is bigger and less sweet when I’m not so lazy LOL.

Another old favorite has returned – the protein pancake! Except I made it waffle style.

I found using an immersion blender works almost as well as my defunct bullet blender did, so I can have these again.

I had some nice sister time on the spur of the moment this weekend. She was coming nearby and texted me to have some coffee – of course!

We even had hearts on our beverages 😀

I can’t believe we are almost halfway through March already. The lighter evening today really felt great. We’re almost on the other side of winter!

    I truly hate this time change – I just feel so out of it for several days. The nor’easter coming is supposed to go all day Tuesday until between 6-8 p.m. I said it’s going to feel weird to have it snowing at 6 p.m. and it still be light out. Why can’t this snow stay in January and February where it belongs?!!

    Your broccoli soup sounds delicious and comforting. And I think most people probably eat those yogurts for a snack, not a meal.

      My sleep has been okay for the last week finally and I am concerned now that the time change is going to mess that up again. I was okay last night, so I have my fingers crossed. It’s only a matter of time before it gets bad again, though.

    I am interested in that Eskimo marigold. I always buy the only white ones in the nursery, called Vanilla, I think. Also, I can’t believe you can grow a passion flower from seeds! You are very adventurous!

      I like the creamy white ones. Sometimes they are called French marigolds. I hope I have luck with the passion flowers. We’ll see LOL

    I’ve had Chobani Flips for a dessert and they are pretty yummy – I’ll have to try that coffee flavor, as I am all about anything coffee-flavored!

    I feel bad for everyone getting more snow this week…REALLY? Don’t blame you for starting your flowers already!

    I love the Flips! I don’t buy them often and usually I buy them for dessert. So yummy. The key lime one is good. 😀

    Have you experimented with the IP yet creating your own recipes? I kinda want to try that (I would create my own recipes for the crockpot a lot) but I’m a little nervous still using it.

      Of sorts with our own recipes. I have just done my slow cooker recipes in the IP as is. They work fine. I haven’t tried pressurizing the slow cooker ones. We do wing it with stuff like cooking quinoa and rice LOL.
