Soaked Oats

Friday is here! Funny how a lot of comments on my injuriversary post from yesterday were about how it couldn’t be a year. Just doesn’t seem like a year because of how much I babbled about the injury over the course of the last year.

I kept it easy today because we are long riding tomorrow!  I came back home for Friday Oat Day.

I followed the Nourishing Traditions grain soaking technique last night.

Of course, I split this by 4 for one serving.  I have soaked in plain water overnight, but this method calls for acidulated water to help break down phytic acid that occurs in grains and can make them harder to digest.  I used buttermilk.

So it was 40 grams of oats, 1/4 cup of water and 1.5 teaspoons of buttermilk.

Nighty night oats!  I left them on the counter overnight (covered – no cat hair please).

This morning, the oats were quite soft.

I then cooked them up.  They actually didn’t seem to cook much quicker (not like soaking steel cuts).

I added pumpkin and egg whites as usual (topped with coconut butter and honey). The texture is super porridge-like.  Quite interesting.  The bowl was huge, too.  It is amazing how much liquid oats can soak up.  I don’t know as this is really worth it for rolled oats, but I will be doing this with steel cut oats.  I didn’t not taste any buttermilk, btw.  I think there just isn’t enough to alter the taste.

Busy day of work today, which is always good.  I stopped for lunch break with a coconut flour biscuit topped with chicken and BBQ.

Plums are very good right now!

I had an afternoon latte paired with the last of the chocolate crisps.  Booo….

Need to petition Trader Joes to open up a shop up here in Tiny Town.

Dinner called and I answered with a pork burger plus a nice pear.  More carbs today because of long ride tomorrow.  Yes, a cupcake ride tomorrow, hopefully. 😀

I spent time cleaning out the garden bed tonight.  More things are peeking out including my sedum and more tulips.  Blooms by Easter, maybe?  I totally forgot what I planted last year for bulbs.  I do that every year and have to try to find my packing list to see what I bought.  I am pretty sure I got some daffodils.  It’s kind of fun not knowing, though.

We were going to walk up the street for ice cream, but it is a little chilly and I changed my mind.  Guess that means coffee instead!

What’s blooming today!

I made an executive decision to take a rest day today.  I probably should have worked out, because I had a date with cereal and chocolate chips last night while watching Project Runway….

Yesterday my muscles were sore and stiff, and I woke up today feeling the same.  It was a combo of increased reps at the gym Wed and getting used to my new bike.  Since we are planning a long ride for Saturday, I decided to just take it easy today.   I had a nice quiet start to the morning outside watering the garden, then came back in for some pumpkin oats:

I topped it with strawberry jam.  I wish I had cranberry sauce (although no excuse there because I have frozen ones), but this was quite good.

Then I started work.  Just job #2 today.  So that is only about 4 hours or so. 😀

Had a lunch break of greek yogurt, strawberries, and Uncle Sam cereal.

So many great textures in this bowl.  After that, I mowed the lawn and clipped around the garden bed.

So it’s not the botanical gardens, but my garden is nice, and I can park my bike here and have it not be stolen…..

The 100-pound rose bush is blooming again (and I still have 100+ pounds off LOL!)

Sometimes I remove self-seeded plants, but most times I just don’t have the heart to and get some interesting combos.

My mums aren’t even close to blooming yet.  Funny how the stores have blooming mum pots and mine are just starting to form their buds.  I will get some of those for pots, though.

Afternoon snackage:

It’s amazing how much time I have when I am not working 9-10 hours in a day.  I was able to have some fun for dinner.  I did sort of a chana masala with some chicken put in there for protein.

I’ll post the recipe at some point (and put it in the recipe book!).  It was tasty.

John invited me out for a kiddie cone down the street.   It was nice to get a little walk in for that.

No eyes on this cone 😐   Mint chocolate twist.  Nom!

John thinks I am pretty silly.

I am off with my mom to her gym tonight.  She is going to show me all the moves she does and ask for some pointers.  I’ll get her in the squat cage yet! :mrgreen:

What’s blooming today

Weekend time! Sort of. I still need to do job #2, but whose counting at this point?

I was looking forward to a calorie busting workout today and I got one. I had a piece of yummy toast and jam prior to leaving.

Then I biked to the gym and hit the iron:

Then I hopped on the treadmill and did 3 miles. I alternated the speed a little and progressively set it faster. I left it at 5.7 mph for the last mile. I was sweating buckets. I totally soaked my entire shirt above the waistband:

I felt so awesome when I was done. Then I biked home and proceeded to have a hot breakfast. 😕

I had soaked some steel cut oats overnight, so I made banana custard oats and topped them with toasted pecans and 1 tbsp of maple syrup.

What an awesome combo this was!!  Why I have never done it before is beyond me.  Maple must be a superfood, right?

Then I rushed to do some blueberry picking.  Storms were rolling in by radar, so I hit the picking early.  This is along the row I was picking in.

The acoustics in the blueberry patch are very odd.  You can here someone talking and it sounds like they are the next row over, but then you see them far away.  It is bizarre.

I so wish I could share the blueberries with all of you.  They are so amazing and wonderful.

It was lunchtime when I got back.  I made a quick wrap with scrambled eggs, laughing cow and hot sauce.

No fruit on this plate because I probably ate a cup of blueberries while picking and driving home.

My blackeyed Susans are out of control.  I did not plant any of these in the front.  All volunteers.  As they are along the walk way.

I am starting to lose the weed battle right now.  With the heat and my schedule lately, I haven’t spent as much time weeding as I should.  Must remedy that this weekend.

Then I headed out for some birthday shopping for my BIL.  Success!  Starbies was in the next plaza over.  So that meant I got to stop and relax with my netbook for a bit.   I was actually quite hungry at this point.

Reduced fat berry coffee cake (320 cal), plus a cup of coffee on the side.  Hot coffee because it was cold in here.  Every place is cold around here inside.

After some relaxing and going over the paperwork on my new account with job #2, I headed home.   Dinner was a yummy chicken breast with laughing cow, BBQ sauce and topped with caramelized onions.  Tasty!

Can one become addicted to oatmeal?

 

Do you ever get addicted to a food that you would not think could be addicting?  I really think I am addicted to oats.  Oatmeal, oat bran.  I have it for breakfast every day (that I am not eating a bagel LOL).  It’s in my protein pancakes, and then just straight up on other days.  I love playing with toppings and additions, and I love how full I stay when eating it.  There are times when I am tempted to have it for lunch as well!

I honestly never knew how great oatmeal was growing up.  Either I thought it was boring, or I only wanted the instant package of Maple and Brown sugar (always the first ones gone from the variety pack)

Yummy oats!

John has had to hide the dark chocolate chips, as I have been sticking my hand in the bag too much. I had been sprinkling them on my oats, and John suggested something to replace it that worked out great – cocoa powder!

The recipe:

1/2 cup rolled oats (40 grams)
1/2 of a banana, mashed (the riper, the better!)
1 tablespoon of unsweetened cocoa powder.
1-2 tsp of peanut butter.

I mashed the banana really well and added it to the water before boiling, this helps break it down better. Frozen and thawed nanas work great for this Added the oats and cocoa powder and cooked until done.
Topped with the peanut butter. Yummy!!
